Hi and hello and I hope you’ve come hungry! I have a huge round up of dinner ideas for you in this post and almost all of the dinners are QUICK and EASY!
As I was typing this post up, I realized how many times I referenced my Ninja FoodiOven. It’s by far my most beloved and used kitchen appliance so I want to share a little more about it as I am fully obsessed and have been for six years now.
MY GOAT KITCHEN APPLIANCE

I received a Ninja Foodi Oven back in 2019 when I did an Instagram partnership with Ninja. Little did I know that it would become my FAVORITE kitchen appliance! I am pretty sure I’ve used it every single day since, sometimes multiple times a day. It air frys, air roasts, air broils, bakes, dehydrates and toasts.
Here’s some ways I use it:
- Toasting Finn’s bagels in the morning
- Heating my sandwiches at lunch
- Air frying chicken nuggets and fish sticks
- Sheet pan dinners for myself
- Roasting all the things in general
One of the best features is that it preheats in under 60 seconds!!! This is a lifesaver when I need to get a meal together quickly. My traditional oven takes 15-20 minutes to preheat. Things also cook much, much faster in the Foodi Oven because it’s such a small contained environment.
It’s important to know that it’s small. That’s good in that it doesn’t take a up a ton of space on your counter. (It’s actually designed to be flipped up after you’re done using it to minimize the counter space it uses, although I never do that.) It’s not so good if you’re trying to cook food for more than 1-2 people. It’s also not very tall so you can’t fit bigger pots/pans in it.
But if you’re in the market for a compact convection oven with an air fryer feature, I 10/10 recommend the Ninja Foodi Oven! It’s on an awesome sale right now. I’m considering ordering a new one as mine is in heavily used condition.
And now for the dinners!
SALMON DINNERS

- I put a piece of salmon and sliced potatoes on a baking sheet.
- I seasoned the salmon with olive oil, salt and a Dizzy Pig Rub and topped it with lemon slices because I like the way they caramelize a little and the lemon juice seeps in.
- I seasoned the potatoes with olive oil, salt and pepper.
- Roasted in my Ninja FoodiOven for about 20-25 minutes. I pull the salmon around 125 degrees F. Sometimes potatoes need to go a little longer.
- Satuteed collard-ini from my friends at Bluebird Farm. It’s the end stage of growing for the collard when the plant flowers. Sautéed it with olive oil, salt and a little garlic and finished with a squeeze of lemon juice.

Very similar dinner but with sautéed broccoli greens that my farmer friend Casey from Honey Tree Farm gave me at the market. Finished them off with parm. I love going to the famers market and discovering new ways to enjoy different parts of various vegetables!

Salmon dinner salad!
- Chopped greens
- Artichoke hearts
- Chopped broccoli, tomatoes, cucumbers, carrots
- Chickpeas
- Dried cranberries
- Feta
- Roasted salmon (same cooking method as first photo)
- Olive oil, sea salt and balsamic
CHICKEN DINNERS

- I put chicken thighs, asparagus and baby portobello mushrooms on a baking sheet
- Seasoned the chicken with Trader Joe’s Soyaki Sauce
- Roasted all in my Ninja FoodiOven at 375 for about 25 minutes
- Served with steamed rice

- Sautéed chicken sausage
- Steamed green beans with salted butter and sea salt
- Steamed rice
- A scoop of Cedar’s Reserve hummus

- Roasted chicken thighs
- Roasted sweet potatoes
- Brown rice
- Simple sautéed cabbage with ACV

This was SO GOOD! Please recreate!
- I put chicken breasts, broccoli and sweet potatoes on a baking sheet
- Seasoned chicken with Dizzy Pig Rub (Wonder Bird) and broccoli/sweet potatoes with olive oil and sea salt
- Roasted in Ninja FoodiOven for about 25 mins on 375 – until temp of chicken was 160
- Served with a big scoop of Cedar’s Hot Honey Hommus – you MUST TRY!

- Kevin’s Cilantro Lime Chicken
- Steamed rice
- Black beans
- Plain greek yogurt
- Avocado
- Salsa
- Cilantro

- Steamed quinoa
- Sautéed chicken sausage
- Roasted sweet potatoes
- Roasted brussels
- Goat cheese
- Hummus
- Balsamic

- Roasted chicken breast and broccoli together on a baking sheet
- Served over steamed rice with a dollop of Cedar’s Reserve Hummus

- Cooked orzo tossed with Trader Joe’s Roasted Red Pepper and Almond Pesto (first time trying this – it’s good!)
- Add the leftover roasted chicken breast and roasted broccoli from photo above + some parmesan cheese

If you haven’t seen enough chicken dinners haha…
- Chicken thighs seasoned with Dizzy Pig Rub and olive oil
- Potatoes
- Green beans
- Roasted at 375 for about 25 mins until chicken reached 160 and green beans and potatoes were soft
THE VIRAL TIK TOK GROUND BEEF BOWL

The viral ground beef, sweet potato, avocado, cottage cheese and hot honey bowl. In this photo it’s served with sautéed spinach from Honey Tree Farm. Okay friends, I know this bowl is all the rage but I tried it three times and it’s just not speaking to me. I’m shocked because I love a meal in the bowl but this one missed my mark.
A FEW MORE MISCELLANEOUS DINNERS…

- Kevin’s teriyaki beef – I really like this for a quick and easy dinner so anytime I see it on sale I grab it!
- Served with roasted brussel sprouts and steamed rice

- My favorite homemade spaghetti sauce over thin spaghetti (superior to regular!)
- Chopped salad with romaine, carrots, pepperonici, kalamata olives, tomatoes and ranch
- Buttered French bread
This is Finn’s favorite dinner!

Lighting was bad but dinner was delish!
- Seared tuna steak seasoned with Trader Joe’s Soyaki sauce
- Steamed edamame
- Steamed sushi rice
- Wasabi aioli made with wasabi paste, mayo, plain yogurt and water

- Trader Joe’s vegetable fried rice + ALDI cauliflower fried rice
- Cook in a skillet – add edamame, leftover chopped seared tuna and a scrambled egg
- Finish with coconut aminos and wasabi aioli
TAKEOUT DINNERS

And sometimes we do takeout! There’s a new Ilios Crafted Greek next to the gym so I picked up one of their family meals one night.
- Rotisserie chicken
- A really yummy salad
- Rice
- Beets
- Pita
- Baklava
- Sauces and dressings

Takeout pizza, salad and chicken parm from Mezzanote. It’s been years (and YEARS!) since I ate at Mezzanote and this was so good!
