Last Week’s Eats + This Week’s Meal Plan

Hey guys! Hope you’re having a great weekend. Packing commenced yesterday but I feel relatively calm and organized about it all. Remind me I said that when I’m losing it later this week when Friday’s moving date gets closer. My plan is to attempt to maintain a semi-normal posting schedule but don’t get worried if you don’t hear from me for a few days. 😉

Tanner started packing up the kitchen yesterday and I said, “WAIT! What are you doing!?” I told him I planned on cooking this week as much as I can until our move day. It helps me keep a bit of normalcy. We compromised on leaving my basic must haves out and packing the rest.

Here’s what I’ve been cooking up since we got home from the retreat and at the end of the post I’ll share our menu for moving week.

Breakfast

Scrambled eggs, fruit and a paleo banana bread muffin with almond butter.

Lunch

Lemony Kale and Chicken Soup with Avocado Toast

I defrosted some of my Lemony Kale and Chicken Soup and YUM! I had forgotten how good this soup is. So great for transitioning into spring with the bright lemon flavor. I ate it with avocado toast.

Dinner

Seared chicken over pearled couscous with asparagus, crispy capers and a blood orange sauce.

I modified it by adding a bunch of seasoning to the chicken breast before cooking and then swapping asparagus for the broccoli that the recipe originally called for (because I’d already used the broccoli for something else). I’m not the worlds biggest fan of capers but I loved them fried and crispy in this dish.

Dinner out at Brixx Pizza with the girls. This was a pizza with prosciutto, mushrooms, sundried tomatoes, artichokes and olives. It was just okay.

And the most random dinner combination goes to…this bowl of leftovers! I took the pearled couscous with asparagus and added green peas to it. Topped it with sundried tomatoes, hummus and sundried tomato chicken sausage.

This Week’s Meal Plan

I ordered Blue Apron again just to keep things simple.

Sunday: Chipotle Meatloaf with crispy potatoes + I’ll add a veggie

Monday: Spicy Shrimp Coconut Curry with green cabbage and rice

Tuesday: Moroccan Chicken with prunes and brown rice

Wednesday: Fish tacos (I’ve been craving tacos)

Thursday: Leftovers + clean out the fridge/pantry

Friday: Postmates or out to dinner (no way I’m cooking on night one in the new place!)

Saturday: Bachelorette party

We shall see if I make all of this happen!

    Yum!!! Totally jealous of your meal plan for the week. I generally feel that cooking is relaxing once I start…it’s convincing myself that I actually do have time to cook that’s the hard part!

      Haha, that’s why I like Blue Apron so much. I already have the meals and no excuse not to start making them and don’t want them to go to waste!

      Haha, I don’t even think about the plating anymore now that I’ve been blogging for so long. I just automatically start arranging the food on the plate. #bloggerproblems

    I think the best way to handle packing is to set a hour or so a day to doing it over a period of time, at least that is what I’m trying to tell myself. I’m avoiding packing like the plague right now. So many yummy eats…as ALWAYS!

      Haha, I’m the opposite. I like to live in chaos for as short of a time as possible so I like to cram it all into a few days!

    Is the red curry turkey burger also a Blue Apron recipe? I have a bunch of frozen turkey meat and this looks appealing. Interested in the recipe if you can share…

      Hey Kat – it’s not. I whipped it up from stuff we had in the fridge. I’ll consider sharing on blog later but I basically just added Thai red curry paste to ground turkey and seasoned it. The sauce was a mix of mayo, sriracha and lime juice.

    generally speaking i find meal planning and cooking a bit annoying and stressful. if i have all the time in the world i think baking is relaxing. as far as random…hmmm probably spoons of pb/almond butter from the jar. but for me that is less random more normal 🙂

      I agree that baking projects are so enjoyable when there’s no rush and you can just relax with a cup of coffee or tea (or wine!) and bake.
