Vacation = White Sand, Rainbows And Cake

Vacation day one was a success. I didn’t work out, finished a book in 24 hours, napped on the beach, embraced my natural curls and went out for dinner with crazy hair and ate cake.

I thought maybe I would go on a run yesterday morning but then my dad and I went to the grocery store so I could stock up on my staples instead.

When we got back I quickly ate this bowl of Greek yogurt with bananas, granola and peanut butter and then hit the beach.

I got in tons of reading, relaxing and swimming. I finished Kristin Hannah’s Between Sisters and although it was an easy read, I found it to be very predictable. I figured out where she was going with it about 50 pages in and it all unfolded as I expected. I usually really enjoy her books but this one wasn’t my favorite.

I came in for lunch and made a sandwich with mayo, mustard, avocado, chipotle chicken, monterey jack, tomatoes and spinach on sourdough. I had Kettle Chips and apple slices on the side with some sweet tea to wash it all down.

We saw this rainbow as we were driving over the bridge from Fort Walton to Destin on our way to dinner last night. It was a full rainbow and so pretty!

We were feeling something casual so we had dinner at Callahan’s Restaurant & Deli. I ordered a salad with grilled tuna on top. It was a huge salad and packed with apples, dried cranberries, walnuts, tomatoes and cucumbers.

I have to admit that I ordered a salad not only because I was craving a veggie-heavy dinner but also because I spotted the dessert case on the way in. Priorities, my friends.

I had to try to Key Lime Cake. It was okay (the icing was wonderful) but the cake kind of tasted like lime Jello mix. My mom’s coconut cake and my dad’s carrot were excellent though. I helped my mom with hers!

We swung by Barnes and Noble after dinner so I could pick up a couple of books. I went with Her Fearful Symmetry and Bitter is the New Black

thanks to your recommendations. I went into the store armed with a list!


Today is Sullie’s 6th birthday and I’m so sad that I’m not there to love on her and bake her treats. Don’t worry…she’s in good hands with her dad though and getting plenty spoiled without me.

    Hope the weather wasn’t as bad for you as it was for us this morning. Keeping my fingers crossed it will clear up by tomorrow so we can spend the weekend at the beach!

    My husband is from Fort Walton Beach so we head down that way at least a couple times a year. That cake looks amazing and I will definitely put that on my list of places to check out the next time we visit!

    Good selection on the books! “Bitter is the New Black” is one of my favorites, and I absolutely love Jen Lancaster. Her latest book isn’t as good but I’ve enjoyed many of her others, including “Pretty in Plaid.” Plus, it helps that “Cowtown” is pretty close to where I live.

    It’s so wild for me to read about someone in Ft. Walton/Destin – that’s where I’m from and I never expect anyone to know about it! Your pictures make me want to plan a trip back – the Emerald Coast is looking beautiful. NYC has beaches too, but let’s be real, it’s nowhere near the same!

    If you haven’t tried Big City Cafe it’s worth checking out. It’s my favorite spot in town. It’s in downtown FWB and has great sunday jazz brunches.

    My inlaws live on the Destin harbor! It’s beautiful down there. I’m embracing the natural waves, too. It’s totally worth it in this heat! 🙂

    I’ve seen you write about about quinoa bowls in recent posts. I bought some quinoa but have no idea how to make it! how do you prepare it for your bowls?

      hi anna – i usually cook quiona using the same ratios as rice. two parts liquid for one part quinoa. i usually do 1/2 cup quinoa, 1/2 cup vegetable broth and 1/2 cup water and cook it for about 20 minutes, covered over low heat. season with salt as necessary. when i do the quinoa plain, i add it over the spinach and add all kinds of toppings. you can also get more creative and cook things with the quinoa like this mexican quinoa: https://www.peanutbutterrunner.com/mexican-quinoa/.

    I had no idea you had curly/wavy hair. I would love to see a post on your straightening routine….you have beautiful hair and I am always interested in other people’s methods to tame their curls without ruining their hair!

    Looks like you are having a great time! I too discovered Publix when I lived in Alabama. Part of my job took me to the panhandle once a month and I loved going to the Ft. Walton/Destin area. And if you didn’t already know, there are some Publix being built in Tega Cay and Indian Land. Not too far away for that yummy ice cream!

    I love the book Bitter is the New Black! Her humor can be a little harsh sometimes, but other than that it was hilarious 🙂 Safe travels!
