Holiday Week Eats

Happy Sunday (at least I think that’s what day it is…they all blur together this time of year). We are enjoying our visit to Florida and my nieces just arrived last night so there is lots more fun to be had! 🙂

Here is a collection of things I’ve been eating throughout the course of the holiday week.

BREAKFAST

Hold onto your hats because you’re going to see a lot of eggs and toast, which is not the norm for me! This was my Christmas morning brunch. Avocado toast on homemade sourdough, two eggs scrambled in butter and a sliced orange.

Toasted sourdough with almond butter and honey and two scrambled eggs with cheese.

A Dave’s Killer Bread cinnamon raisin bagel, one half with almond butter and honey, one half with butter. Two eggs scrambled in butter.

Same bagel (I ate the other half, it just wouldn’t fit on my plate for the photo) along with scrambled eggs and half a grapefruit.

And I’ve had a couple of bowls of my dad’s homemade yogurt and granola with bananas and almond butter.

LUNCH

I took a couple of weeks off from this combo but it’s back. Turkey, cheese, avocado, mayo, mustard and bread and butter pickles on wheat. I’ve decided that Publix Greenwise Bread and Butter Pickles are my favorite. They’re perfectly crisp and sweet.

PB+J. For reference, I love the Bonne Maman Four Fruits Preserves.

More turkey + avocado + bread and butter pickles.

Grilled cheese and tomato soup.

DINNER

Chili with cheese, sour cream, avocado, saltines and hot sauce.

Shrimp and grits.

Homemade pizza with an arugula side salad. My dad made all of the above dinners.

ETC

By far one of my favorite snacks of 2018.

This cake with a glass of milk the last four nights in a row.

Time to enjoy the day with my family.

Best holiday dessert that you’ve eaten?

What have you been eating for lunch lately?

Moab Run The Rocks Race Recap (3 Day Stage Race)

Moab Run The Rocks Race Recap (3 Day Stage Race)

I cannot believe it’s been nearly a month since I completed Moab Run The Rocks! It’s a three-day stage race in Moab, Utah that’s put on by the same race organization, TransRockies Rockies Race Series, that I did my six-day Colorado race with back in August. TransRockies truly excels when it comes to planning and [...]

Moab, Utah Trip Recap (put this on your bucket list)

I recently spent four nights in Moab, Utah for a three-day stage trail race called Moab Run The Rocks.
