I missed writing a recent eats post last week so I have quite the backlog of photos to share with you. I decided to break it up into two parts and part one is all about meals in bowls. As I was assembling some of these bowl creations, all I could think to myself is that my dad would TOTALLY turn his nose up at them.I really don’t think he would eat a single one of them. He thinks that some of my food combinations are pretty weird. Haha.

BREAKFAST BOWLS

I brought back sweet potato breakfast bowls this week. Mashed sweet potato and banana topped with almond butter, granola and plain greek yogurt. This was my first time adding the greek yogurt and it was good! FYI…I warm the sweet potato/banana mixture and then add the other stuff.

Smoothie Bowl with Cascadian Farm Cinnamon CrunchSmoothie bowls. Nothing new to see here but I do recommend topping your smoothie bowls with the Cascadian Farm Cinnamon Crunch Cereal. It’s delicious!

Greek Yogurt, Granola, Cherries and Almond Butter

Plain 5% Fage Total, bananas, honey, granola, cherries and almond butter. If there were one bowl my dad MIGHT eat, it would be this one…but he would not be on board with the almond butter on top.

LUNCH BOWLS

Arugula, Smoked Salmon and Avocado Salad

This salad combination that was so insanely delicious! I tossed arugula in olive oil, balsamic, honey and sea salt and then topped it with smoked salmon, avocado, marcona almonds, dried cranberries, feta and hemp hearts.

And you’ve already seen this bowl in my 8 month day in the life post but I have to include it again for the bowl round up! 🙂 It’s mashed sweet potatoes, sauerkraut, avocado and fried eggs.

DINNER BOWLS

Now this is where the fun REALLY starts. I should have my dad offer photo-by-photo commentary here and report back to you guys with it.

Chopped Salad with Dr. Praeger's Kale Veggie Burger

This is the Trader Joe’s Veggies and Greens chopped salad kit to which I added feta and avocado. I put a Dr. Praeger’s Kale Veggie Burger on top.

Veggie Burger Bowl

Oh this is a good one that’s pretty out there! Sauteed spinach, roasted sweet potatoes, brown rice, feta, a fried egg, a Dr. Praeger’s Kale Veggie Burger, hummus and a drizzle of Tessamae’s Avocado Ranch. My dad would probably rather go to bed hungry than eat this for dinner.

Last one and this one was one of my favorite creations ever! Baby spinach topped with brown rice, smoked salmon, artichoke hearts, feta, avocado and Tessamae’s Avocado Ranch dressing. This was REALLY good and you should totally recreate it.
