I have a simple and delicious recipe for bacon, egg and cheese breakfast bagel bites to share with you today. With back to school season in full swing, these breakfast bagel bites are the perfect recipe to add to your regular breakfast rotation on school days.
BACON, EGG AND CHEESE BREAKFAST BAGEL BITES
My son is obsessed with bagels for breakfast. He asks for one every single morning but often asks for them plain or buttered. I was brainstorming ways to give his morning bagel a little more staying power and nutrition and thought why not add three things he also loves – bacon, eggs and cheese.
He loves those mini pizza bagels so I decided my idea would work best if I used mini bagels to make a “breakfast bagel bite.”
BREAKFAST BAGEL BITE INGREDIENTS
I kept the ingredients and the prep simple because who has time for anything complicated on a school morning!? This recipe has five simple ingredients – mini bagels, salted butter, eggs, cheddar cheese and bacon.
- Mini bagels – I used plain bagels but use any variety that your family likes. I think wheat and everything bagels would be great with this combo too.
- Salted butter – I used this to butter my bagels after they came out of the toaster and to cook the eggs in.
- Eggs – You’ll top your toasted, buttered mini bagels with scrambled eggs. I like to scramble my eggs with salt and a little bit of milk or cottage cheese whisked in. I partnered with Farmhouse Eggs to create this recipe for an Instagram partnership. I really liked them! They come from cage-free hens fed a vegetarian diet. They have a thick, brown shell and a plump, vibrant yellow yolk. They’re available in select grocery stores around the country. I got mine at Walmart.
- Cheddar cheese – the cheese is sprinkled on top of the eggs. I like a freshly grated sharp cheddar for optimal melting and flavor but you can use a pre-shredded cheese or any type of cheese you like.
- Bacon – the bacon, egg and cheese combo is a classic one and a little sprinkle of crumbled bacon really ups the tastiness factor of these breakfast bagel bites.
HOW TO GET BREAKFAST BAGEL BITES READY IN A HURRY
This is already a simple recipe but you can streamline the prep even more a few different ways:
- Precook and crumble the bacon and store in fridge. Note, I also love microwaving bacon for a quick preparation that doesn’t leave you and your house smelling like bacon. This recipe calls for four slices of bacon so I would place the slices on a plate with paper towels underneath and on top and microwave on full power for four minutes. I typically do one minute per slice.
- Pre-shred the cheese and store in fridge.
- You can even assemble the breakfast bagel bites the day before all the way up to the final broiling stage. Store them tightly wrapped in the fridge and in the morning, pop them onto a baking sheet and into a toaster oven for 10 minutes or so until they are heated through.

I made these for my family the last time I was in Florida and everyone loved them! My grandmother ate them for brunch and dinner that day! There is certainly nothing fancy about this recipe but it’s crowd pleasingly simple and yummy. A great way to start the day!
