Happy Friday! I’ve got a ton of lunch ideas coming for ya in this post.

After teaching 15 group fitness and yoga classes in the span of 7 days – put a fork in me…I am done! While I absolutely love teaching, I am very much looking forward to having two full days off and lots of QT with my little guy this weekend. We are doing all the sports this weekend – Finn has a soccer game, we will watch the Georgia game and we are going to the Panthers game. We are also doing a quick fall photo mini session so I need to “shop our closets” and put together outfits for that.

Alrighty, big topic change. It’s been months since I posted any recent eats so I’ve got them coming for you in the next couple of posts. In this one we’re going to focus on breakfast and lunch. Next post will be dinner and other things.

RECENT EATS: BREAKFAST

Obsessed with this combo and eating it on repeat. Vanilla greek yogurt (ALDI organic is my favorite brand), granola (either Purely Elizabeth or homemade), this Modern Mill omega mix, fruit and almond butter or peanut butter.

Again but packed for work and with Chobani pumpkin greek yogurt instead of vanilla.

Cottage cheese scrambled eggs with sauerkraut cooked in salted butter, grapes and banana bread with salted butter (we go through a stick of it every week). The ALDI Autumn Crisp grapes have been really good recently.

Sunday brunch with Finn. The Trader Joe’s organic jumbo cinnamon rolls are 100% and highly recommend.

I did an Instagram collaboration with PET Dairy for the Every Woman’s Marathon and shared this oatmeal bowl recipe that I love for post-run fueling. It has a great balance of carbs, protein, fiber and fat. You can find the full recipe in my post!

RECENT EATS: LUNCH

Egg salad sandwich on honey wheat with tomatoes and romaine. I can’t remember the last time I had egg salad but I had two hardboiled eggs in the fridge this week and the idea popped into my head. Kept my egg salad super simple – just chopped eggs, salt and mayo.

Mixed greens, fresh fits, avocado, chickpeas, pine nuts, hearts of palm, carrots, dried cranberries, radishes, balsamic vinegar drizzle and poppyseed dressing.

Romaine, herbed goat cheese, kalamata olives, carrots, red peppers, pine nuts, cucumbers, avocado and ranch dressing.

Okay, take note of this one. I haven’t bought roast beef in forever but was craving it and can’t get enough of this combo. Sourdough, mayo, roast beef, dill pickle chips, avocado and pepper jack cheese. I stick it all under the broiler for toasty, melty goodness.

Mixed greens, leftover air fried tofu, carrots, chopped dried apricots (really delish in a salad!), cucumbers, pine nuts, dried cranberries, chickpeas, red peppers, herbed goat cheese, balsamic vinegar drizzle and poppyseed dressing.

Lunch date with Finn at a new Super Chix near our house. It’s a quick service chicken spot – like an elevated Zaxby’s. I had a delicious salad and Finn had a kid’s meal with tenders, fries and soft serve chocolate ice cream.

Greens, avocado, cucumbers, radishes, chickpeas, pine nuts, quinoa, red peppers, feta and leftover salmon with basil balsamic dressing.

I’ve eaten a lot of PBJs the last few weeks. Sometimes you can’t go wrong with the simplest foods. My favorite combo is Trader Joe’s creamy natural peanut butter with Bon Maman four fruits preserves on Nature’s Own honey wheat.

Open faced turkey sandwich on my dad’s sourdough with mayo, avocado, dill pickles and muenster cheese.

Hardboiled eggs, grapes, naan and Trader Joe’s ranch cottage cheese dip (which was not my fave and I won’t get again).

Leftover wild rice blend, leftover pre-marinated herb chicken thighs from Trader Joe’s, avocado, tomato and the Trader Joe’s cottage cheese ranch dip.

Another roast beef sandwich. This one regular and not open-faced and with spicy mustard added.

I’ll finish off this post with a delicious smoothie I had for lunch in the middle of a long day of teaching yoga in Tennessee last weekend. It was a blueberry cheesecake smoothie from Java Juice House and had almond milk, blueberry, banana, homemade cashew butter, honey and vanilla protein. Will be recreating this one at home. It was SO good!
