Welcome to recent eats: the salad and smoothie edition. I think that our immediate launch into summer here in Charlotte put me in the mood for cold and light food. I’m NOT COMPLAINING though. I will take 90 degree days over 40 degree days ANYTIME. I am a summer girl through and through. Bring on the heat!
Green smoothie April wrapped up 10 days ago but I’ve drank a smoothie for breakfast 9 out of the last 10 mornings. It’s just the best way to start the day. I make a lot of salads at home for lunch every day. I am always switching up my combos and I have a new one to share with you that I’ve had three times this week. Here are the recent eats!
Breakfast
PB & J smoothie with no greens. I was out. I did add some protein powder (and lots of PB!).
Another purple pb & j smoothie but this one did include spinach.
Green smoothie with banana, spinach, mango, peaches, vanilla greek yogurt, vanilla coconut milk and protein powder.
Lunch
Salad of mixed greens, arugula, strawberries, avocado, pecans, queso fresco and a honey mustard dressing topped with a Hilary’s Eat Well Veggie Burger.
My new favorite salad combo of the week. I have had this for lunch the last three days in a row. Her are the details: Mixed greens + arugula Cucumber Red Pepper Hardboiled Egg Goat Cheese Boar’s Head Ever Roast Deli Chicken Nuts (pecans, almonds, walnuts, etc) Dried Cranberries Avocado Honey Dijon Balsamic Vinaigrette Try it! You will love. A perfect blend of crunch, healthy fats and protein.

Dinner
Oh look…more salad! Dinner out with friends who were in town visiting. Mixed greens, cremini mushrooms, goat cheese, bacon and grilled chicken.
Baked salmon topped with a basil and meyer lemon compound butter served with mashed cauliflower and green beans. Fave meal of the week! (Well, after Dad’s pizza on Monday night.)
Mashed sweet potato, chicken and roasted broccoli and mushrooms.
