July 4 Week + The Rest of the Eats

What a week it has been! Between the July 4th holiday, a lot of my clients traveling and our nanny being out on vacation this week, my schedule has been so wacky. Layer on top of that Finn getting a surprise stomach bug that had me last-minute canceling several things and I feel a bit all over the place at the moment. The schedule craziness will continue next week as my mom will be here and we’re traveling to Durham for a few days of appointments and procedures at Duke.

This is all figure-outable stuff and I’m rolling with it, letting go of what I can’t control and getting creative as necessary.  🙂

Here’s a quick peek at the week and I’ll finish with the dinners that I promised I’d follow up with in my last recent eats post.

JULY 4

I kicked off my July 4 at the gym with an 8a training client. I can never resist a good theme outfit on the holidays and got lots of compliments on this one!

My next stop was Charlotte Yoga where I taught a hot power class at 9:30a. I LOVE teaching on holidays. The energy is always amazing. Class was sold out, it was so hot and sweaty and everyone was in great spirits. I messaged about paying attention to what makes you feel the most free, creative and present for the life that is right here in front of you. And to do more of those things, be in more of those places and be with those people.

I then headed BACK to the gym for one more training client at 11a and then a friend met me for a fun workout – that I am still feeling two days later as I write this post.

Fourth of July pool

I made a quick lunch at home and then hit my swim club for a couple of hours. The July 4th festivities were bananas and included some wild watermelon wrestling game and a belly flop competition. It was excellent people watching. The highlight of my pool time was a few trips off the diving board and discovering that I still have a pretty solid flip.

I got home from the pool around 5p and the rest of the evening looked like work on the couch, Thai delivery and starting the Tour de France documentary on Netflix (10/10 recommend).

WEDNESDAY

Got my boy back around midday on Wednesday. We hung out at home for a few hours and then hit up the 4:30p classes at Khali. Finn took kids and I took vinyasa. Finn brought his dino to class with him and the team at Khali gave Blue his own mat. So sweet. We both had awesome practices.

THURSDAY

And that brings us to today…Finn and I dropped the dogs off at the vet this morning. They both had annual exams and grooming appointments. You guys, Finn broke down in tears when we were left the dogs because he was so worried about them getting shots. For my local readers, we are still VERY happy with Independence Veterinary Clinic.

I dropped him off at a play date and went to teach yoga. While I was at yoga, I got a text from the mom that Finn wasn’t feeling well. I rushed to pick him up as soon as class was over and he was in a sad state.

He had a 101 fever and had thrown up. Needless to say, I cleared my calendar for the rest of the day and it’s been snuggle central over here. He threw up a few more times at home but that seems to have subsided and he’s kept down toast. Hopefully we are through the worst of it and I pray I am spared, haha. It’s wild how quickly these things can hit. He went from smiley at the vet to out for the count in a matter of two hours.

The doggies came home from their day at the vet/groomer looking so fresh and clean. I have the most exciting news – Zoey has lost 10 pounds since her annual visit last year!!! She was weighing in at 81 and I couldn’t believe my eyes when she was 71 today! I’ve always exercised her a lot but the thing that made the difference was cutting back her food. She is getting one cup twice a day. I feel like I’m starving her but the vet assures me that I am not. I’m so pleased with this progress and it’s great to see her moving around with a little more ease. She’ll be nine in October and I want her to keep feeling good in her senior years.

RECENT EATS: DINNER

Trader Joe's vegetable fried rice with shrimp

Trader Joe’s vegetable fried rice add a scrambled egg and sautéed shrimp. Finished with coconut aminos and sriracha.

Baked salmon cooked in the Trader Joe’s Soyaki sauce with steamed basmati rice and sautéed Ready Veggies from TJs.

Another salmon dinner with the same veggies and rice but Trader Joe’s yellow curry sauce instead. Kinda hooked on this combo for an easy dinner.

I did a sheet pan dinner with chicken thighs, brussels, mushrooms and a frozen root veggie mix from Aldi. Served over quinoa with hummus and tzatziki.

Last one! Cilantro lime rice topped with a cherry tomato/corn/cilantro salad, avocado, cheese, black beans, plain greek yogurt and these queso fresco and jalapeño turkey burgers.
