I love Blue Apron!

I have another week of Blue Apron eats for you today. Blue Apron has become one of my favorite ways to mix up our dinners and as I’ve shared before…I just love the convenience and variety. My most recent delivery was awesome and I think the best yet!

So my first dish in this week’s shipment was a salmon panzanella salad. I was super excited about this because one of my favorite dishes at a local restaurant is their salmon panzanella and I’d never tried it at home.

I think this was our favorite of all three dishes. It was bursting with freshness and flavor. It’s a wonderful end of summer dish. I plan on recreating it at home using the recipe from Blue Apron. I appreciate that they give you all the recipes so you can remake favorites on your own. All the recipes are posted on the website. I have been eyeing the Summer Ratatoullie and Parmesan Polenta and the Crispy Eggplant Pitas.

Night two was a stir fried ginger chicken over coconut rice.

The chicken mixture included ginger, japanese eggplant, tinkerbell peppers, basil and ponzu sauce. It was served over this coconut rice that was to die for.

I served it in my favorite Asian-inspired dishes with chopsticks for a festive ethnic dinner.

And the third night was Spiced Meatballs. You might think for a second that they were served over penne pasta but that’s actually a summer squash salad! I’d never made a raw squash salad but it was great under the warm meatballs. A great mix of hearty and light.

Blue Apron has options to meet your needs…you can choose a two-person plan that provides one delivery per week with three meals or a family plan that provides two deliveries per week with two meals in each delivery. Each plan features meals that are under $10 per serving and the portions are extremely generous!

One of the biggest selling points for me is that there is no commitment required and I can skip weeks whenever I want to. You can also customize your menu based on what they are offering for the week. On my next delivery I think I’m going to take the vegetarian track because they all look so good!
