I love Blue Apron!

I have another week of Blue Apron eats for you today. Blue Apron has become one of my favorite ways to mix up our dinners and as I’ve shared before…I just love the convenience and variety. My most recent delivery was awesome and I think the best yet!


For those of you who are unfamiliar with Blue Apron, it’s a delivery service that provides all the fresh ingredients you need, in just the right proportions, delivered to your doorstep. They literally give you everything you need to create chef-designed recipes with no additional trips to the grocery required and NO FOOD WASTE! I mean, seriously. This is impressive, right?


So my first dish in this week’s shipment was a salmon panzanella salad. I was super excited about this because one of my favorite dishes at a local restaurant is their salmon panzanella and I’d never tried it at home.


I think this was our favorite of all three dishes. It was bursting with freshness and flavor. It’s a wonderful end of summer dish. I plan on recreating it at home using the recipe from Blue Apron. I appreciate that they give you all the recipes so you can remake favorites on your own. All the recipes are posted on the website. I have been eyeing the Summer Ratatoullie and Parmesan Polenta and the Crispy Eggplant Pitas.


Night two was a stir fried ginger chicken over coconut rice.


The chicken mixture included ginger, japanese eggplant, tinkerbell peppers, basil and ponzu sauce. It was served over this coconut rice that was to die for.


I served it in my favorite Asian-inspired dishes with chopsticks for a festive ethnic dinner.


And the third night was Spiced Meatballs. You might think for a second that they were served over penne pasta but that’s actually a summer squash salad! I’d never made a raw squash salad but it was great under the warm meatballs. A great mix of hearty and light.

    A tinkerbell pepper! What is that? I want to find one. I have always wanted to try to make a panzanella at home. I just need to find a good recipe.

    Lovely! I always wanted to try Blue Apron but its not available in Hawaii.
    However, all of your delicious (ono – Hawaiian word for yumminess) ingredients I can get at our Farmers Market. Thanks for sharing, I will definitely make these awesome dishes.
    So, tell us about your MOVE, I’m surprised your kitchen isn’t all packed up…Along with the puppies. Tell us more

    I hear only good things about Blue Apron and truly value your opinion! As an avid cook(like you!), I want to think I don’t need this service but it sounds like it would give me convenience, tasty meals, and creative ideas. Thank you so much for the discount code. I got the vegetarian plan for 2 b/c they currently don’t have it for families and deleted all deliveries containing eggs. Looking forward to it and already feel some relief!

    My aunt just bought me a gift card yesterday! My first shipment comes next Thursday and I”m super excited. This is a super busy time of year for me and my husband so the more help we can get the better 🙂

    I’ve been wanting to try Blue Apron for a while now, my boyfriend got a free trial for three meals and I’m so excited! That ginger chicken dish with rice looks soo yummy! Blue Apron seems like such a great service, especially because it’s hard to get creative in the kitchen after a long day at work (at least for me)

    i also am a fan of BLUE APRON- i tried it as a referral from my sister-in-law and have been very happy with MOST of the meals i have made (one was just OK). ironically, i HAVE made panzanella before- but never with salmon! will have to try that out! i had it this week and its coming again next week…. its so hard to say no- the meals all look so yummy!

    Check out Plated, too! I’m a huge fan. Before I went on a Paleo diet I was eating it twice a week. I’d been using it for 2.5 years and it made me love cooking! Haven’t had a chance to try Blue Apron, but I’ve heard that Plated has a much better meal selection and same if not better food quality as Blue Apron.

    Just ordered a 2-person plan (even though it’s just me!) for delivery in a couple weeks. Can’t wait to try it and excited to not have to think about grocery shopping when classes get busier.

      WOW Blue Apron is amazing! I cooked my first meal from them tonight. Pan seared cod and summer succotash with pickled grapes. Seriously delicious. I will be making that recipe again and using Blue Apron again.
