I hope it’s been a great Tuesday for everyone! This week is equal parts flying by and going slow…I feel like it should be Thursday because of how much I’ve already packed in. I’m taking it all in stride though. I have really improved my ability to give myself a break when I feel like my plate is overly full. I know it’s unrealistic to think I can get it all done so if I get the most important things done, I take a deep breath and leave the rest for another day. It’s been very freeing.
Quick update today on things I’ve been eating lately along with giveaway winners and my upcoming workshop/event/training schedule.
Recent Eats
Apples and peanut butter or almond butter has been a daily afternoon snack for me. I am officially ADDICTED to this Wild Friends Chocolate Almond Butter with Crunch Almond Pieces. After I posted about the holiday flavors that we ordered, the gals from Wild Friends sent me a few other flavors to try and might I say that this even beats chocolate peanut butter? Yes, that good!
Wrap with apples, chicken, spinach, tomatoes, honey dijon and cheddar.
Quinoa, chickpeas and cranberries over spinach and topped with feta and avocado. One of my students brought this to me leftover from a holiday party and it’s awesome.
I am obsessed with this salad combo that I’ll be sharing with you soon.
So much so that we have had it for dinner THREE TIMES in the last week and we never do salads for dinner! It features a warm, seasonal, flavorful mix of toppings that go so well together.
Veggie pho date with a friend.
Roasted cornish hen over red onions, potatoes and brussels sprouts.
Served with stuffing. This was a Blue Apron “Thanksgiving for Two” themed meal.
Burgers on ciabatta rolls with fontina, a lemon aioli and dressed, shredded lacinto kale with roasted potatoes and carrots. I loved this burger. Another Blue Apron meal. My fiance said he never knew he liked kale on a burger but wants it on every burger he eats after this!
Last BA meal…chicken meatballs over celeriac mash with braised kale. This was my first time cooking with celeriac and we both kind of looked at each other and said…”this is different.” Not bad different, but really different.
