Hi and I’m super happy to be sitting down on the couch right now. I taught three hot yoga classes and took a class today along with juggling multiple work deadlines. I’m not really sure what the tipping point is but when I teach two classes a day it feels totally manageable but bump it to three and I am beat, especially if I practice on top of that. Five hours in a 100 degree room with 65% humidity will wear a girl out! 😛
This is the time of the year when everyone needs subs so I’m teaching more than usual this week (including Christmas Eve and Christmas Day). I’ll take some time off in January and February so it will all even out in the end.
I’ve got some weekend stuff + recent eats for you today.
Wednesday night dinner. Lemon Parmesan Salmon with a rosemary quinoa/brown rice blend and roasted brussels with dijon, lemon juice, almonds and parmesan cheese.
Thursday night dinner. Lamb and beef burgers in a Tuscan kale wrap with sliced avocado and harissa aioli. Roasted sweet potatoes and cauliflower on the side.
Friday night dinner out at Napa on Providence. I had the duck two ways which was duck breast and confit duck leg over fennel and mushroom risotto with truffle oil and duck demi glace. A few things here…1) the portions at Napa are huge. This could have easily have been shared between two people. 2) The confit leg was AMAZING. 3) I always go with chef’s suggestion for meat temperatures but this duck was way rare for my taste.
I taught a Relax, Restore and Rehab workshop on Saturday at Y2 with my friend and fellow teacher Liz. It was a hit with and we had a sold-out room and a lot of relaxed yogis. Liz led them through various hip, shoulder and spine openers and I taught them how to roll out and hit trigger points using a lacrosse ball.
Saturday night brought family Christmas with my fiance’s family. Honey baked ham and turkey, stuffing, mac and cheese, roasted brussels and butternut squash and rolls.
I got all decked out in my holiday Paige Demim Red Skinnies. I only break these out a few times a year but they’re super holiday appropriate and festive.
Sunday morning brought muffin baking (recipe tomorrow!), omelet making and bacon eating.
Tis the season for edible gifts. One of my friends and students totally spoiled me with this amazing box of chocolate covered everything peanut butter. YUM!
I had lunch at CO today. It was my first time trying this new trendy spot. It’s a Pan-Asian fusion restaurant with locations in Charleston, Charlotte, Savannah and Myrtle Beach. I had the Miso Ramen with chicken wontons, tofu, baby bok choy and wakame. It was good but didn’t blow me away. I’ll definitely give it another shot though.
I wrapped up this long day with lots of chips and hummus, a glass of wine and an open faced sandwich of sourdough, cranberry sauce, avocado, chicken and brie.
Time to crash and start over again at 6 a.m. tomorrow!
