I slept horribly Sunday night. There’s something about getting off of my sleeping schedule on the weekends and worrying about sleeping through my 5 a.m. wake up call on Monday mornings to teach BodyPump that just really interferes with my sleeping on Sundays. Last night was way worse than usual for some reason.
I was a mess teaching BodyPump this morning. I feel sorry for my class. I was having one of those days where what I was thinking and what came out of my mouth were just not meshing. Ugh.
Moving on from that disaster…I was so ready for a big bowl of oatmeal this morning. Today’s mix was 1/3 cup oatmeal, 2 tablespoons Bob’s Red Mill 10-Grain Cereal, 1/2 cup water, 1/2 cup oats, pinch salt, 1/2 banana, cinnamon, raisins and chia seeds. Topped with Crofter’s and Justin’s Honey Almond Butter. And lots of black coffee. Restorative. I swear.
Lunch was a repeat of Saturday’s lunch combo.
A veggie sandwich with a plum on the side.
The sandwich was light mayo, spicy mustard, homegrown tomatoes, spring mix, avocado, sprouts and salt and pepper on Great Harvest Dakota.
My snack this afternoon was a couple dried figs and apricots. Nothing too heavy because I didn’t have a workout planned.
I headed to the grocery store after work today to do our weekly shopping. Overall, it was fine but I have to vent about two things that I Tweeted about earlier. 1) Why do some people have to invade your personal space in the check out line. It’s not your turn to pay yet. Get away!!! 2) Why do the baggers INSIST on still wrapping everything in plastic even when you bring your own bags. I had to have a heart-to-heart with the bagger today and that I didn’t want to take ANY plastic home with me. Geez!
Dinner tonight was stuffed shells.
I basically used this recipe for Veggie Lasagna Rolls and made it into stuffed shells.
My plate – three stuffed shells (+ I went back for one more) and a side salad – baby greens with tomatoes, carrots, red pepper, radishes and balsamic vinaigrette.
Desperately needing to get a good night’s sleep. I really want to get up and go to a yoga class before work but I’m struggling with whether sleep will be more beneficial for me at this point. I’ll let y’all know what I decide tomorrow! I’m leaning towards sleep! 😉
