Hey guys! I hope you enjoyed your middle of the week Fourth of July holiday.

Ours was quiet but nice. I took a quick trip to Metro in the morning where I squeezed in some treadmill walking, rowing intervals and a quick upper body dumbbell circuit while Finn napped and chilled at the front desk. ๐ The remainder of my day looked like a Trader Joe’s run, a walk in the neighborhood and chilling at home.
Virginia invited us to have dinner with her family so Finn and I got showered and dressed for that around 5:30 p.m.

How cute is his little patriotic outfit? I snagged it on sale at Baby Gap and I think he looks so handsome and grown up in his collared one-piece! ๐
I didn’t snap any pictures of dinner but we had some delicious homemade pimento cheese as an appetizer while we sat around chatting and then dinner was burgers with all of the fixings, a watermelon/feta/arugula salad and a corn side dish. We had homemade pound cake with fresh fruit and whipped cream for dinner.
It was the nicest evening and Finn was a good sport throughout! We were home and in bed before 9:30 where I hung out feeding Finn and watching a movie on my laptop. I had to blast the white noise machine last night so that we could all sleep (dogs included!) due to all the fireworks people were shooting off in my neighborhood.
Okay, I’ve got a collection of recent eats from six weeks postpartum today. I’m still eating intuitively and not following any sort of diet. My main concern lately is making sure I’m eating enough to support breastfeeding since keeping my supply up is a top priority!
BREAKFAST

I’ve actually been eating a lot of eggs lately, which y’all know isn’t my norm! Here’s two eggs scrambled in Kerrygold butter, banana bread and fruit.

This smoothie was so big it wouldn’t fit in a bowl so I poured it into a two-cup measuring cup. I have a tendency to get carried away when I’m adding ingredients to my smoothies.

More scrambled eggs with fresh fruit and half of an apple fritter.

Why only half? This thing was bigger than a softball! Apple fritters from The Donut Hole are my favorite so I had to be sure to get one while I was in Florida.
LUNCH

I’ve been eating a ton of peanut butter, honey and banana sandwiches.

And also as toast. I don’t know what it is about cheese crackers but I think they go so well with sandwiches, especially PB&J and PB&B.
Speaking of sandwiches, they definitely taste better when eaten on the beach. This one was chicken, avocado, tomato, provolone and mayo.

Here’s a lunch bowl with leftover couscous, half an avocado, tomatoes and a scoop of hummus.

Snack plate with avocado and chicken roll ups, cottage cheese and pita chips and fruit.
DINNER

Burrito bowl with lettuce, rice, black beans, grilled Vidalia onions, corn, cheese, tomatoes, homemade guacamole and crema.

Baked salmon with a brown sugar mustard sauce, couscous and green beans.

The most amazing pork loin with peanut butter sauce over mashed cauliflower and steamed rice. I must put this peanut butter sauce recipe on my blog ASAP!

And finally, boiled shrimp with cocktail sauce, hush puppies and a warm potato sausage salad. Salad on the side. This was our dinner the last night I was in Florida and it was so good! I’ve been hit or miss with shrimp since pregnancy but these were the best I’ve had in a very long time.

Give me all the ice cream! I’ve been craving it like crazy on these hot summer nights and I’ve had a bowl almost every night for many weeks. This was Publix Cookies and Cream along with Haggen Dazs White Chocolate Raspberry Truffle.

Glad you had a fun 4th of July and Finn just looks so adorable in his outfit!! Also, that Haagen Dazs flavor is my all-time FAVORITE!!!! (It can actually be difficult to find, only certain grocery stores in my state carry it.) I love it with some pomegranate seeds on top and drizzled with a little balsamic vinegar ๐
Our town had Fourth of July fireworks last Saturday, so we went to the park for some live music and firework-watching then. That meant a very laidback day on the actual Fourth – pool in the morning, then inside (aka away from the summer heat) for the rest of the day. But it was nice to stay inside, since I got lots of things done around the house (including an afternoon nap!).
I will always like dark, creamy chocolate ice cream. If it has something tasty mixed in (such as brownie bites, Reese’s peanut butter cups, or the like), even better! =)
I have been REALLY into eggs lately too, which is so not like me. Iโm wondering if it has to do with the fact that my 17mo is really into them so I just eat them too? Or theyโre a fast, healthy way to get some protein with a infant around? Who knows ha.
Fireworks… I hate how much they bother our fur baby ๐ but last night was the first time my 5yo really enjoyed them and wasnโt scared of the noise … we strolled around our neighborhood together enjoying them while my husband put our babies to sleep, it was really nice to share a little moment with just her. Luckily our little ones didnโt seem to notice them, however we are in the thick of the 4 month sleep regression so thatโs a whole other sob story ?

Your July Fourth night sounds so sweet with your girl! Oh god, I’m dreading that 4 month sleep regression. I’ve heard horror stories.
Finn looks so cute in his outfit. My favorite ice cream flavor is dulce de leche. Haagen Dazs used to make a cinnamon dulece de leche that was divine!

What white noise machine do you use? Our first baby is due in September and between our two french bulldogs and my husband there is a lot of snoring!
Haha, I just use an app on an old iPhone plugged into a bose player but I need to buy an actual machine for when I transition Finn to his nursery.
That’s awesome you’re able to take him to Metro so young! Do they have childcare services there? What about y2yoga? Any child care there? Do you plan on continuing to go there, or no? Sorry if too personal–was just a huge part of your life for so long…it’s weird to see you not mention it at all! Has Finn been there yet? What about Namaste Kitchen?! You used to eat there multiple times a week! I know this is a huge adjustment for you, and you’re doing an AMAZING job!! Will you take him to the Y at all?
Hey Laura – no childcare at Metro but it’s such a small gym that the girls I know who work there don’t mind watching him while I workout…especially if he’s sleeping! (Of course, just while he’s this young and still pretty mobile…will be a diff story when he’s moving.)
