ICYMI + Last Week’s Eats

Confession. I was seeing ICYMI all over the internet and social media and I had no clue what it meant for months. I finally Googled it and learned that it stands for, “in case you missed it.” Now I know.

My blog guru Isaac did a WordPress and plugin update last week and unfortunately the combination of the two sometimes causes issues. I learned that some people were having issues accessing my site and many others were unable to leave comments. I was wondering why the comments were so quiet last week, I thought you guys just didn’t have much to say! 😉 I was tipped off that there was an issue when I posted yesterday’s giveaway and received no entries in the first couple of hours.

We got it all figured out and all is well again. I say “we” like this was a team thing but really Isaac is the star of this show and worth every penny that I pay him for hosting and maintenance.

So, ICYMI…here’s a quick recap of last week’s posts:

Slow cooker teriyaki chicken with stir fry veggies over cauliflower rice. My verdict on this is that it was just okay. Tanner really liked it but I don’t think it’s a share-worthy recipe.

Ina's Perfect Roast Chicken

Valentine’s Day roast chicken dinner. Ina will never let me down. The chicken was fresh from one of the farmers I buy from regularly at the farmers market.

We also shared this spicy tuna napolean special that our sushi chef was serving and it was just crazy good.

    Surprisingly, I did know what ICYMI was… but it took me forever to figure out was OOTD way (outfit of the day). I was like what in the heck?! All these acronyms are confusing.. haha! Glad you got your blog straitened out! I asked previously about wedding planning and it wouldn’t go through… I thought maybe you rejected the comment! Ha! Will you ever share about what’s going on there.. or too personal? (totally respect that if that’s the case!!)

      Haha, I’m the same on OOTD, mostly because I know nothing about fashion! 🙂

      RE: the wedding…definitely not too personal. We are trying to figure that one out. We have been totally consumed over the last two years with getting the new studio off the ground. We’re finally to a place where we can begin to step away and breathe. Updates soon! 🙂

    Nope, had no idea what ICYMI meant until this blog post! But, I’m also in my late 30s and not “hip” anymore! 😉
    Could you share what type of pan you’re using for Ina’s roast chicken recipe? I’d love to try the recipe and whatever it is you use to roast the chicken looks like a great pan to add to my collection. Thanks!

      Yes, of course! It’s the Le Creuset Heritage Covered Casserole and I LOVE it! I use it a lot. My parents gifted it to me last Christmas. My dad sure does know how to give good kitchen gifts! 🙂

        Thank you! I assume you have the 4 qt size? There is a smaller, 2.5 qt size but I can’t imagine it accommodates a chicken and vegetables!

    ha, I had no idea what that meant! my son would say it’s because I’m old. although learned a lot of the techy stuff from running my blog, I still call my blog designer guy for help most of the time when something is wrong!

      haha, yeah i definitely think we’re aging out of the “young and hip” category. 😉 but grateful for all that i learned as i made my way through that stage of life!

    Oh man, I just recently learned what ICYMI meant too. Sometimes I feel like I’m living under a rock. I’m so connected to social media yet so disconnected at the same time? I also have no idea what’s happening in pop culture these days. I just don’t care!

    My current fav breakfast is a huge planty smoothie + 2 eggs. It makes me feel so nourished!

    I had NO CLUE what that meant…When it comes to tech problems, I have to call it in. I’m actually looking for someone new to work with as far as web design, so I’m going to check Isaac out. Favorite breakfast this week was a blueberry/blackberry nut butter smoothie. Going to make it again soon. The warm weather always has me craving smoothies.

    I need to make Ina’s roast chicken ASAP! What are your favorite vegetables to cook with it? She says carrots and fennel, but fennel isn’t loved around here. Have you used potatoes? Thanks!!
