All Hail The Grilled Cheese

It’s a grilled cheese for dinner kind of night over here.

I was craving simple comfort food after a crazy day. I have had a serious love for grilled cheese sandwiches since high school. My favorite combo used to be just bread, muenster (so stringy!) and butter but I’ve broadened my grilled cheese horizons a bit. I kept it pretty easy tonight with cheddar, manchego and tomatoes grilled on wheat with salted butter in a cast iron skillet. Summer fruit on the side – watermelon, strawberries and blueberries.

I did get my greens + protein in at lunch. Spinach salad with tomatoes, bacon, fresh mozz, grilled salmon and a blueberry vinaigrette.

Okay, I’m off to relax and enjoy something almost as comforting as a grilled cheese, a glass of red wine! Getting myself on the couch ASAP!

    Yum! I LOVE tomatoes on grilled cheese sandwiches. My favorite combo is cheese, tomatoes, spinach, honey mustard, and cracked pepper. The Grit’s version with their homemade bread is the BEST! Happy Thursday! 🙂

    It was a rainy day in the Midwest today and I also had a delicious grilled cheese with Trader Joe’s tomato soup with some added spices. Yum!

    Grilled cheese and tomato soup. Mmmm. Followed of course by chocolate ice cream and a glass of red wine! Makes me wish it was cold and rainy outside right now instead of warm and sunny.

    my go to comfort foods are oatmeal, or warm soup…sweet potatoes too..yum!

    I’ve never thought to add tomatoes to a grilled cheese but it sounds delicious. One of my favorite things after a long day of work is curling up on the couch with a great show and a huge bowl of homemade popcorn.

    Grilled cheese is one of my comfort foods too. I like it with pepperjack, sharp cheddar, tomato, and avocado!

    Chocolate milk (well, dark chocolate almond milk now) or unfortunately, chocolate chip cookies right out of the oven 😉

    Your grilled cheese looks amazing. I am definately a cheese and wine (or champagne) girl when it it’s been a long day. Hope you get your rest!

    Your sandwich combos are always the best looking! Noodles are my go-to comfort food, especially in hot soups. In the winter red wine is my go-to drink, in the summer – good gin.

    Mmmmm grilled cheese. I like to pile a whole mess of gruyere on seven grain bread. If I’m feeling truly decadent, I’ll tuck some bacon in there, too.

    That sandwich looks amazing! I love Manchego cheese – i was just in Mexico and that’s all they use. Serious heaven. My comfort foods are chili, grilled cheese + tomato soup, or a big bowl of cheesy pasta.
