13 Things I’ve Eaten Lately

Hold onto your hats people! I have a recent eats post for you that does NOT include smoothie bowls or turkey sandwiches. I’ve been mixing up my breakfasts lately and you’ll even find waffles in the rotation! And there are lots of sandwiches, but some fun and different combinations.

So here are 5 breakfasts, 5 lunches and 3 dinners. Hope this gives you some inspiration for the week ahead!

BREAKFAST

waffles

Waffles topped with maple syrup, almond butter, peaches and blueberries. The waffles were made from the Whole Foods store brand pancake/waffle mix and my opinion on that is that I like my homemade waffles better. Even still, you can never complain about a waffle breakfast!

Two eggs mixed with cottage cheese and scrambled in salted butter. Half of a Dave’s Killer bagel with butter and cream cheese, fresh fruit (bananas, raspberries, blueberries, plums and bananas). If you haven’t tried stirring cottage cheese into your eggs, do it!

Renaissance Patisserie croissant

Croissant from Renaissance Patisserie. I adore this bakery.

protein oatmeal

Blueberry banana oatmeal with cottage cheese and egg whites stirred in for extra protein. Topped with almond butter. Similar oatmeal recipe here.

Yogurt, granola and fruit bowl

Plain yogurt, homemade granola, bananas, plums and peanut butter.

LUNCH

Grilled cheese

Grilled cheese with cheddar and provolone and cooked in butter.

Peanut butter, honey and banana sandwich

Peanut butter, honey and banana on honey wheat.

Chicken and avocado sandwich

Chicken, mayo, avocado, tomatoes and pepper jack on whole wheat.

BBQ chicken sandwich

Chicken tossed in BBQ sauce with mayo, avocado, tomato and pepper jack on Dave’s Killer Good Seed. I stuck this under the broiler to warm it and melt the cheese.

spinach salad

And here’s one salad. 🙂 Chopped spinach tossed in a honey dijon vinaigrette with hardboiled eggs, chickpeas, apples, pistachios, cheddar cheese, avocado and dried cranberries. This was a really good mix of ingredients.

DINNER

Shrimp Tacos

The yummiest shrimp tacos with an avocado/tomato/lime salsa and cilantro lime cream cheese. The two shrimp on the side were for Finn. He also took down an entire tortilla.

Thai chicken green curry

Thai green curry with chicken and veggies. I ordered this via Postmates. (Use my code EZ8IN for a free first delivery).

Chicken enchiladas

The chicken enchiladas I made earlier this week were SO GOOD! I ate them two nights in a row topped with FAGE Total 5% plain, half an avocado and lots of cilantro.

I made a big Trader Joe’s trip yesterday and took photos of what I bought. I’ll share that in the next few days. I actually forgot until I sat down to write this post that I’m getting a Blue Apron delivery on Tuesday. I had a gift card that I hadn’t used that was a baby gift. I haven’t done any type of meal delivery service in a long, long time and I’m really looking forward to it so that I can mix up my meals a bit.

    All of your eats look delicious. I just bought Dave’s Killer English Muffins. I didn’t see the bagels. I need to take a look at those waffles. They would make a good breakfast during the summer.
    I like making banana whipped oatmeal and topping with peanutbutter. So good!

    I’ve never added cottage cheese to scrambled eggs, but it sounds good! When do you add it? While cooking or after they’re cooked?

    All of your food is pretty simple and sounds so yummy! Especially that peanut butter, honey, and banana sandwich. One of my favorites!! Thanks for sharing all your great ideas!
