Lately

Thank you for your kind words, encouragement and support on my Decisions post. I am very lucky to have such insightful and thoughtful readers.

That said, I am not considering having a baby (at least right now, sorry Mom!) or leaving my job. I apologize if I freaked some people out. A full explanation is coming later today in a separate post.

And here is a photo-heavy look at the last couple of days.

Silk Nog overnight oats Friday morning after an abnormally challenging (but amazing, as always) hot vinyasa class.

Open-faced tofu sandwich with spinach and pepper jack on Great Harvest Whole Grain Goodness for lunch Friday.

And a slice of whole wheat cinnamon chip for dessert.

Kombucha to fuel me through my first (and hopefully only) trip to the mall during the holiday madness.

Pizza to recover from Christmas shopping.

With my handsome, scruffy husband who is all about the beard right now (this is a once a year occurrence).

Lil’ Greek – please no one ever tell me how bad Mellow Mushroom’s Esperanza dressing is for you. It is just too good.

Cosmic Karma on my half. How can you ever go wrong with pesto swirls? Mmmm…

Brandon’s all-time favorite dessert – Butterfinger Lady Finger Cake. My mother in law made this for him on Friday and I may or may not be helping him put a dent in it this weekend…

Saturday morning breakfast – French toast with Great Harvest Whole Wheat Cinnamon Chip and a Morningstar “sausage.”

Eggnog Cheescake Bars for Jen’s holiday potluck.

All of the delicious food that we could not eat because we had dinner plans. It was torture! Notice Caitlin’s Christmas tree sweater – it was tacky Christmas and although we did not dress up because we couldn’t stay long, there were some good ensembles there!

Dinner at Cyros with Meghan and Josh – newly engaged and just in from California! 😀

The best sushi in Charlotte. Seriously.

Happy weekend! Hope that preparations for Christmas are going well for everyone. My dad and I are trying to finalize the menu for Christmas Eve and Day. I will share tomorrow!

    I really wonder what this big decision is! I have absolutely no idea! I’ll definitely check back later then 🙂
    All the food looks delicious! Especially that amazing cake! Your mother-in-law looks like quite the professional baker!

    Again, I am amazed by all that food. I am also considering growing a beard but I just can see it on myself plus it might take me like 2 months. LOL.

    Hi-
    I am new to your blog. Caitlin mentioned the egg nog cheesecake bars, w/ a picture, so I came over to look for a recipe. Have you posted it and I missed it?
    Now I get to read a new blog..all for looking for a recipe. 🙂

      Hi Laurie – I haven’t posted the recipe but I used this recipe from Martha Stewart but subbed gingersnaps for the graham crackers in the crust, used 1/3 less fat cream cheese and added cinnamon to the batter. Hope this helps! Thank you so much for checking out my blog!
