But first, I’m going to catch you up on some recent eats. I have received so much great feedback on these posts and the ideas/inspiration that they generate. This week’s meals have lots of fig influence!
Breakfast
This morning it was my favorite recent green smoothie combo and coffee. I am so obsessed with Trader Joe’s frozen figs and have been using them in my smoothies every day. I like to do a PB&J theme with them and mix in banana, strawberries and peanut butter. So good!
Lunch
Really random salad with mixed greens, avocado, carrots, feta, sunflower seeds, tomatoes and sundried tomato chicken sausage.
Turkey sandwich with farmers market tomatoes, avocado, provolone, mayo and fresh basil.
Sunday brunch at Nolen Kitchen. I was so not in the mood for “brunch food” so I ordered this awesome salad instead. Mixed greens, beets, spiced pecans, herbed goat cheese, avocado and sliced apples topped with grilled salmon.
Dinner
Confession: the ONLY THING I wanted for dinner on Sunday night was frozen yogurt. I was so close to going to Yoforia but was already super cozy in my PJs so I decided to man up and make some veggies instead. I opened the fridge to see what produce needed to be used and then sauteed squash, zucchini, kale, mushrooms and sundried tomato chicken sausage and then served it over this lentil and green chick pea blend from Trader Joe’s and topped it all off with feta and balsamic. Random but delicious.
And tonight’s dinner was super simple but hit the spot. I used an ALDI flatbread and topped it with fig jam, prosciutto, goat cheese and a four cheese Italian blend. After baking I topped it with a drizzle of aged, syrupy balsamic. SO GOOD! This is by far my favorite flatbread combo ever.
