The week has been off to a delicious start over here!
I did some baking on Sunday afternoon and made this zucchini carrot quick bread. I was hoping to share the recipe with you but it’s not quite ready yet. I want to try it again with a few modifications and see if I can take it from really good to great. I don’t like sharing recipes that I’m not 100% happy with myself. And I’m only 95% happy with this one.
Which hasn’t stopped me from eating slice after slice for breakfast or an afternoon snack with a little tea.
As usual, there have also been a lot of green smoothies and I’m back on espresso again. This is primarily due to the fact that I’m out of Tassimo coffee t-discs and haven’t reordered. I have a Tassimo and a Nespresso. My Tassimo can do espresso but I prefer the Nespresso espresso and just use the Tassimo for coffee. I have an endless supply of Nespresso capsules so I’ve been drinking a lot of it lately. (Maybe that’s why my clients say I’m being so tough this week…highly caffeinated!).
I met a friend at Luna’s Living Kitchen for lunch on Monday for a blog/fitness industry/website brainstorming session. We both ordered this arugula salad with pecans, pumpkin seeds, raisins, cashew “cheese,” pears, spiralized veggies, pears, avocado and a veggie burger.
On Tuesday I had the birthday luncheon for my photographer friend at Bricktops. I ordered the Palm Beach Salad that is a beautiful stack of avocado, crab, tomatoes, shrimp and hardboiled egg.
I was finally home today to make lunch! I made a wrap with honey dijon, avocado, turkey, brie, tomatoes, brie and arugula. It was so good!
I’ve been cooking dinner at home this week. On Sunday I made a big pot of coconut green curry using eggplant, green beans and zucchini from the farmers market along with some tofu.
You can find my base recipe for Coconut Green Curry in this post. I served it over brown jasmine rice and I’ll always recommend a healthy dose of Sriracha on top! I ate the leftovers last night. I’m not a big leftovers person and usually just cook a single serving of whatever I’m making, but this is one of those recipes that’s even better leftover.
On Monday night I had a major craving for my fig and prosciutto flatbread. I love it so much!
