Oh my gosh. Today was nuts! I literally didn’t stop moving all day.
For those of you who love “day in the life” here’s brief synopsis of mine.
5:30-9 a.m. – gym…train 3 clients and meeting
9 a.m. – 12:30 p.m. – home for breakfast, write first PBR blog post, respond to comments and so many emails, Run Charlotte Run social media
12:30 p.m. – 3 mile run
1:15-2:20 p.m. – shower, eat lunch, pack up for the rest of the day
2:30 p.m. – Metro management team meeting
4-7 p.m. – studio to teach back-to-back yoga classes. Covered the earlier class for a sick friend. Start on Run Charlotte story in 30 minute break between classes.
7:30-9 p.m. – meeting at Whole Foods about an upcoming project
9-11:00 p.m. – home and heat up leftovers for dinner, finish Run Charlotte story, emails, make tea and eat a snack, second blog post
The days literally pass by in warp speed. Time flies!
Okay, here’s a look at recent eats this week. I’m proud of the eats because they’ve been mostly homemade and healthy despite work insanity.
Breakfast
Daily smoothies. Lots of coffee. The perfect fuel to start the day.
Lunch
Leftover pizza and salad.
Salad with a mix of arugula and Trader Joe’s Cruciferous Crunch, avocado, honey goat cheese, carrots, cucumbers, celery, chicken breast, dried cranberries and pumpkin spiced pumpkin seeds.
Dinner
On Monday I made a big batch of bolognese sauce with local grass fed ground beef and lots of veggies. I served it over spaghetti squash with parmesan. I’ve eaten this twice this week.
I rarely eat salads for dinner but I was craving one on Tuesday. Arugula, spinach, carrots, celery, toasted pecans, dried cranberries, feta, tomatoes, avocado and honey dijon chicken breast.
On Wednesday night I met friends for wine and dinner. I ordered the most amazing, to die for, killer scallops of all time. They were the size of golf balls and served over a creamy butternut bacon mixture.
And we plowed through two orders of truffle fries for the table.
Etc.
Vino.
It’s honey crisp apple season! I stocked up on organic honey crisp apples last weekend at Trader Joe’s and have been eating them with peanut butter for a snack. So good!
What’s your favorite type of apple? For me it’s a tie between a pink lady and honey crisp. I do not care for red delicious or granny smith. And any “mealy” or “soft” apple is a no go for me! I need cold and crisp!
