It’s time for another edition of “What I Ate In Florida” AKA “Delicious Things My Dad Made For Dinner.” I’m excited to share this recap because he tried some new recipes on this trip that I think y’all will enjoy.

But before we get to those dinners…here are a few breakfast and lunches prepared by yours truly.

BREAKFAST

One of my favorite things to eat for breakfast when I’m in Florida is a big yogurt bowl with my dad’s homemade granola. I love the FAGE yogurt spilt cups with the fruit on the side. I used that as my base (peach and mixed berry are my two fave flavors) and then top it with granola, fruit and peanut butter.

I was definitely NOT going to say no to a Parlor Doughnut when my aunt walked in with a big box of them one morning. They are so insanely delicious! I had the strawberry shortcake you see on the left. If you happen to be somewhere with Parlor Doughnuts (it’s a franchise) – highly recommend trying them!

LUNCH

Ham sandwich with mayo, avocado, muenster cheese and sweet pickles. Cherries on the side.

An açaí bowl with my dad’s granola, blackberries, strawberries, blueberries, bananas and peanut butter. I used the frozen Sambazon açaí bowls for the base in the mango passion fruit flavor. Very refreshing lunch for a hot beach day!

DINNER

My dad has decided that it’s now a tradition that we have quiche on the night that we arrive. He typically does a quiche Lorraine with ham and cheese. Side salad with romaine, carrots, shredded cheese, tomatoes, croutons and blue cheese dressing.

Parmesan polenta with roasted vegetables. My dad has been incorporating a lot more meatless meals into the dinner rotation since his heart surgery last summer. This was a hearty bowl of creamy, cheese polenta with roasted squash, eggplant, red onions, peppers and tomatoes.

Chicken and mushroom crepes with béchamel sauce. This dinner was outstanding but time consuming for my dad. It took every bit of two hours. It was his first time making homemade crepes and he nailed them!

I ended up eating one and a half crepes, and we spooned some leftover béchamel over top. They were rich so a side salad was the perfect accompaniment.

Chipotle tostadas with pineapple salsa. This was my dad’s first time preparing tostadas at home and they made for a fun and tasty build your own dinner. Kinda felt like I was eating an open faced sandwich. My dad used the recipe I linked to but added black beans for the base.

Ribs, baked beans and potato salad for Memorial Day! I cannot tell you the last time that I had ribs so this was a treat! Also, my parents make the BEST potato salad and I need to post that recipe ASAP for your summer cookouts.
