Good morning!
I promised the apple cinnamon oatmeal recipe yesterday but then I got distracted.
By babies! Two of my best friends just had babies within a week of each other. They are 3 and 4 weeks old. I met one friend for lunch and another for a walk and visit.
This baby is like, “you are not my mother.” It was a really sweet afternoon of tiny babies! And I got to experience what it’s like to change a diaper 3 times in 5 minutes! Fun times! 🙂
Let’s talk oatmeal. Here’s the lineup of what you’ll need for the Cranberry Apple Cinnamon Oatmeal.
The key to making this oatmeal super delicious is sautéing the apples and dried cranberries in coconut oil and cinnamon. It gives you soft, cinnamony apples and plump cranberries for your oatmeal. No coconut oil? No problem. I have also used a little pat of butter as well.
After sautéing the apples you add everything else to the saucepan and let it cook on a low heat. Another key to oatmeal success is not rushing the cooking process. A lot of times I’ll but the burner on low and get ready/do things around the house while it cooks. You want to give it 10-15 minutes to do it’s thing. This gives you really soft oats.

Cranberry Apple Cinnamon Oatmeal
The oatmeal is really good straight up but of course I’m going to encourage you to put a spoonful of peanut butter on top. I like to spread some apple or pumpkin butter over the oats and then the peanut butter. Give the peanut butter a minute or two to melt over the oats and then don’t stir it in! Eat a little bit of the peanut butter along with the oats as you go.
