Happy Friday! I have been super good about cooking and eating at home this week despite a busy work schedule. I only ate one meal out…dinner on Monday night. The key to this is being prepared! I did a major Whole Foods trip last Sunday to stock the kitchen full of fruits, veggies, breakfast and lunch supplies and protein and it’s kept me going through the week.

Since I shared the smoothie I’ve been drinking for breakfast and the salad I’ve been making for lunch in my last post, I’m only sharing dinners in this post. I love cooking dinner at the end of a long day. It’s serious therapy for me. For tips on how I make this happen, check out this post I wrote back in January.

Chicken seasoned with Dizzy’s Pigs Fajita-ish (this rub is awesome!), green beans and roasted parsnips, carrots and mushrooms. The roasted veggie mix was soooo tasty. I love parsnips.

On Wednesday night I spent the night with a friend who has a six-week old baby. Her husband was traveling on business so I went over to keep her company and feed her. When we go out for dinner we always order risotto so she requested that I make it at home. I made a mushroom risotto and served it with lemon herb salmon and roasted asparagus. We didn’t eat until 10 p.m. due to risotto stirring and baby bathing/feeding/swaddling/bedtime but it was all good! 🙂

By the time Thursday rolled around I was running low on supplies but didn’t want to go to the grocery. I was in the mood for comfort food so I made an egg, avocado and cheese sandwich on my dad’s homemade sourdough. I splurged at Whole Foods and bought salted Kerrygold Butter (and the splurged part is in regards to spending the money on it…not buying real butter. No fake butter in my kitchen!) and it’s heavenly on the sourdough.

So dinners were on point this week but I also wanted to share some recent reads with you. I have come across so many share worthy things lately.
