Happy Monday! I kicked my day off bright and early with four clients in a row at the gym starting at 5:30 a.m. Three training clients and one yoga private. Everyone asked how my weekend was and it kinda felt like it never even happened…it just passed in a blur.
I stayed home on Friday night (as usual) and hung out with the puppy. I posted this pic on Instagram about what a relaxing Friday night we were having and then I stood up and walked across the room and found myself with the prongs to a shattered ball ornament impaled in my foot. Oh life with a puppy. 🙂
The other highlight of the weekend is that Zoey got in her crate to sleep with the door open without me luring her in there for the first time. Small steps but good progress. She’s in for a major awakening tomorrow when the trainer comes. Her little life will never be the same! 🙂
Here are a few recent breakfast, lunch and dinner eats to share.
I have been mixing some other breakfasts in with my smoothies lately. This was a big bowl of pumpkin banana oatmeal with egg whites stirred in and topped with Wild Friends Pumpkin Spice Peanut Butter.
Overnight oats also made a comeback. It was the easiest thing to pack to take to the gym this morning to power me through my four in a row. I made a big mason jar full of oats, chia seeds, pumpkin, plain greek yogurt, coconut milk egg nog, dried cranberries and bananas. Again, topped with Wild Friends Pumpkin Spice Peanut Butter. I wish it wasn’t seasonal and I could buy this delicious stuff all the time!
I love cooking brunch on Sundays! I made a killer omelet combo with two eggs, pesto gouda, olives, artichokes, sundried tomatoes and olives. Dad’s homemade sourdough on the side with fresh fruit.
I don’t think this salad could be more seasonal. It’s crazy delicious and you must try this combo. Spinach, arugula, pears, roasted butternut squash, beets, avocado, toasted walnuts, cranberry pecan goat cheese, deli chicken, dried cranberries and a maple dijon balsamic vinaigrette. If you haven’t put roasted squash on your salads yet…get on it!
I didn’t feel well on Saturday afternoon so I spent a few hours on the couch watching a movie and eating cheese and bread. That always makes one feel better. This is some flatbread tarte thing from Trader Joe’s that was just so so.
Friday night steak dinner. Sauteed portobello and spinach on the side. I topped the steak with blue cheese and aged balsamic. I have been craving them lately.
And finally, leftover bolognese from the depths of the freezer over spaghetti squash. It was a comforting dinner for a cold Sunday night. And perfect refuel food after running 6.5 miles in the dark with a friend. We were only planning 4-5 but felt so good we kept going.
Okay…off to do my 1,000 rep home workout and then go teach yoga! Have an amazing week!
