Hey, hey! I had a very sweaty Tuesday. I taught hot yoga at 6 a.m., 9:15 a.m. and 12:30 p.m. and also took a class at 11:15 a.m. My 6 a.m. was hilarious…I had two people walk in at 6:30 a.m. half way through class and rolling out their mats thinking it was Monday (our Monday, Wednesday, Friday classes start at 6:30). I think the short week was throwing everyone off!
I got home from the studio at 2 p.m., ate lunch, cleaned the house, bathed Sullie (not fun for either one of us…and the water was BROWN!) and then worked on the computer until heading to the gym to train a client and lift. It’s been a good day! ๐
Lots of delicious recent eats to share tonight. Note, there is no breakfast because I don’t take pictures of my smoothies very often these days. I do eat overnight oats on the days that I have to pack breakfast to eat at the studio or gym.
More cold wraps but I started using spinach & artichoke hummus as my base layer and YUM! Obsessed. Ate this at least three times in the last week.
Half of a tomato, avocado, and cucumber sandwich with berries for a late afternoon snack.
If you haven’t tried smoked salmon on your salads, get on it! Blueberries, raspberries, blackberries, walnuts, avocado, goat cheese, dried cranberries, spinach, mixed greens and smoked salmon. Amazing salad.
Steamed artichoke with a dipping sauce of mayo, lemon juice and worcestershire. My mom got me hooked on this when I was very young and it’s always a special treat! ๐
Dinner out a party. Cheese tortellini, beef tenderloin in a mushroom sauce, chicken piccata, veggies and salad.
Baked salmon with brussels sprouts and parmesan cous cous.
Vietnamese take out. There is a wonderful Vietnamese restaurant about a mile from my house and on the nights that I just can’t pull off dinner, it is my go-to. We tried the Goi Ga salad for the first time…shredded cabbage, carrots, and onions tossed with grilled chicken and served with sweet and sour sauce.
And their amazing bo bia spring rolls which are jicama rolls with chinese sausages, dry shrimp, green onions, green leaf lettuce, and basil and served with the most delicious and addictive peanut sauce ever.
While we’re covering dinners out, I had this kale salad at Vivace on Saturday night for my girl’s dinner. This is my second time having it and it might be my favorite salad in Charlotte. I added salmon to it this time which just took it to a new level! This salad features really thick diced pancetta, pistachios, dried figs, caprino cheese and a fig balsamic vinaigrette. Seriously…if you live in Charlotte…go. Try it.
And finally, my Memorial Day dinner was a lemon herb salmon burger from Whole Foods topped with a homemade aioli. I served it over a roasted portobello mushroom with roasted fennel and sweet potatoes. This was my first time roasting fennel and YUM! I topped it with grated parm and it was really tasty.
