I have a late weekend recap for you!
I got to sleep in on Friday which was pretty magical. I taught my 9:30 a.m. hot class at Y2 and then had an exciting lunch meeting with the owner of The Track & Field Store here in Charlotte about a partnership we are starting. They are like the Brazilian version of Lululemon and I can’t wait to share more with you!
We met for lunch at the cafe at Y2 where I ordered our Superflow Wrap. It features house-roasted chicken, avocado, cucumber and local hummus in a 7-grain wrap with a side salad. So good.
We have the best sushi chef EVER and he also surprised me with this Japanese curry. I wish I could let you taste how amazing this was. He is such a talented and amazing chef.
I headed back to the studio at 5 p.m. for a massage. We just hired a new therapist and she’s amazing. Charlotte peeps…make a point to come see Kim! It was the most perfect way to end my week. My fiance and I talked about going to a movie Friday night but decided dinner and a movie at home sounded better. I picked up stuffed chicken from Reid’s and then roasted some veggies on the side. We watched Insurgent.
Saturday flew by in a blur of farmer’s market, teaching yoga, a yoga workshop, pressure washing (the most addictive home improvement activity ever) and date night. We went to Foxcroft Wine Co. for dinner after wrapping up a late night pressure washing session at 8:30. I just listen to an audio book and get in the zone forever!
We shared the salad in the previous picture and this delicious tuna. The salad was mixed greens, heirloom tomatoes, local mozzarella, hazelnuts and a duck confit topping. The tuna was served over a corn puree with grilled corn, mushrooms, potatoes and pumpkin seeds. It was all so good. This is my favorite date night spot in Charlotte.
Still loving my Sunday mornings. Woke up at 7:45 and didn’t get out of bed until 9:45. It feels like such an indulgence to lounge and a rainy day made it that much sweeter. I whipped up some green juices and french press coffee to help get the day started.
And then made homemade waffles with a blueberry peach compote, bacon and scrambled eggs.
I was scheduled to teach my monthly Total Strength rotation at the Y on Sunday afternoon and wanted to get a quick run in before. I got caught in the rain and it was actually very nice and relaxing. A good break from the summer heat and humidity.
I hit up Costco after teaching class at the Y. It was not the smartest decision I’ve ever made given that it was the day before school started back. It was NUTS! I resisted the urge to buy all the things because we’re actually moving next week (more details soon) but I got a few staples.
My cart included essentials like spinach for smoothies, wine, cheese, Tide and Premier Protein. I love these shakes for a quick source of 30 grams of protein, especially on weeks that I up my strength training. Want to try it out? And this was my rainy Sunday night comfort dinner. Everything came from the farmers market! Spinach gnocchi tossed with homemade pesto with sauteed Italian sausage and cherry tomatoes.
