Happiest of Fridays!
This week has been really tough as I’ve juggled moving, getting used to a new space, living among boxes in general disarray all while trying to get my home ready for the couple moving in. Despite this, I still had a really good week of eats. One of my first priorities when moving is get the kitchen unpacked (only second to get the bed made and towels out). I was able to cook dinner our second night in the house and I made sure to be stocked on oatmeal, smoothie and salad basics as well.
Here’s a look at moving week meals…
Acai bowls.
Fall salad. Arugula, deep greens mix, diced honeycrisp apples, roasted butternut squash, baked tofu, avocado, dried superfruit blend, feta and homemade honey dijon balsamic.
Couscous bowl. Arugula, parmesan couscous, baked tofu, kalamata olives, cucumbers, sundried tomatoes, feta, hummus and plain greek yogurt.
Salmon salad. Deep greens blend, roasted butternut squash, leftover baked salmon, dried superfruit blend, avocado, almonds, feta, homemade honey dijon balsamic.
Snack plate.
First dinner in the new house. Baked tofu, roasted brussles sprouts with lemon olive oil, almonds and manchego, parmesan couscous.
Maple dijon baked salmon with roasted butternut squash, white asparagus and leftover brussels.
100% from scratch tacos with potato, chorizo, shitake mushrooms and eggs. A few weeks ago I shared a new online cooking school concept with you guys, Salted. I have been using it to try some new things in the kitchen. This week it was homemade tortillas and a more creative taco filling!
Hard at work! It’s really easy to watch the tutorials as you cook.
It was a fun project but my tortillas left a little something to be desired. It’s recommended to have a tortilla press to which I thought, “like I need another kitchen gadget.” But I just couldn’t get my tortillas thin enough while still being able to handle them doing it by hand.
The tacos tasted great but the quest will continue to conquer tortillas!
I waved the white flag and we got takeout at 10 p.m. from my beloved Saigon Palace last night. We were at my house cleaning and clearing out until 9:30 and I wanted food and bed ASAP. Vegetarian pho with shrimp and dried Chinese sausage spring rolls.
