Hold on to your hats because I’m about to write something that’s going to make you wonder if you’re reading the right blog.
This fall I am testing out some changes to my diet. I’m swapping smoothies for oatmeal and salads for soup and warm veggies. I know, I know. Totally goes against everything you’ve seen here for the last oh…two years and I’ll go into more depth about the reason for the switch in a follow up post so in the meantime send me strength as I fight smoothie withdrawal!
As part of this switch I have been getting a little more creative with my lunches lately and today I’m excited to share with you a recipe for a warm brussels sprout salad that I got from Salted.
Remember how I reviewed Salted a month or so ago? It’s an online cooking school full of video courses and tutorials from over 100 well known chefs (read my review for a full overview). This warm brussels sprout salad was one of the first recipes that I saved on Salted when I was first checking out the site and it’s been on my mind ever since!
I have really been enjoying Salted. I just prop my laptop up on the counter and cook right alongside the chef. I have found the videos to be very easy to follow and very detailed. I also appreciate that the chef’s make it easy for you to modify the recipe based on taste, preference, what you have on hand, etc.
Take this recipe for example. The original recipe called for bacon, I used prosciutto because it was what I had in the fridge. It also called for a shallot. I didn’t have one so I just left it out. The recipe called for sherry vinegar, I used balsamic. The results were still an amazing and delicious warm salad.
This salad starts with making a warm vinaigrette in a pan with the bacon/prosciutto and then adding the shredded brussels sprouts to cook with the vinaigrette. Note: I cooked my brussels a little longer than the video tutorial called for because I wanted them a little softer. You top everything off with a poached egg, shredded manchego (or whatever cheese) and chopped pistachios.
Honestly, this salad didn’t even take me that much longer to put together than my normal cold salad. I don’t know if I’m a slow salad maker or what but sometimes I spend 20 minutes plus assembling my lunch salads by the time I chop veggies, toast nuts, make vinaigrettes, etc. This warm salad was ready in under 20 minutes and tasted amazing!
