The Week of Eats

Happy Friday!

I’m currently on a break from a marathon yoga day over here. I taught a triple header this morning with one left to teach this afternoon and one to take after that. I love teaching yoga more than anything so this day of teaching is no big deal although I did joke with my students this morning that teaching 4 hot yoga classes the day after getting your hair cut, colored and blown out kind of puts a damper trying to extend the blowout as long as possible. 😉

A few recent eats before I get back to it.

I met a friend for breakfast at Earl’s Grocery where I enjoyed an egg and cheddar sandwich on wheat and a green juice with an awesome ginger kick. Head’s up for locals…the juices at Earl’s are only $5.69 which is a great price and a generous serving.

Several mornings this week my breakfast looked like a protein bar, a banana and coffee. So much running around between the yoga studio and the gym to train clients!

Leftover roasted veggies topped with goat cheese and a perfect egg. (Tutorial in this post.)

The Yin Yang Salad at Y2. Spinach, cabbage, cucumbers, carrots, green beans and walnuts tossed in a creamy cashew lime dressing and topped with a housemade sweet potato chick pea cake. Served with a homemade hot sauce so that you can find your “yin and yang” between the cool and creamy dressing and the spicy sauce. The wine on the side was because we were doing a tasting with our wine reps to add a couple new wines to our menu. I don’t usually drink with lunch!

Another salad with spinach, carrots, mushrooms, avocado, honeycrisp apples, dried cranberries, pine nuts and feta topped with a homemade tahini dressing. Again, I know I said I was cutting back on smoothies and salads but it’s 80 degrees here today and this was all I wanted after being in a hot room all morning.

Honey Balsamic Glazed Chicken Breasts (recipe in this post) taken to a new level of deliciousness by topping them with goat cheese. Roasted parsnips, carrots, sweet potatoes and beets on the side.

Baked garlic and herb crusted salmon topped with sundried tomatoes and feta. Broccolini and pine nut couscous on the side.

Homemade chicken parmesan over spaghetti squash. I CAN’T BELIEVE I have never posted this recipe. I have been making it for over 10 years and it’s one of those you could make with your eyes closed. It’s so good!

Very random but surprisingly amazing dinner bowl. I warmed some leftover brown rice and couscous and then topped it with a mixture of sauteed chicken breasts with spinach, sundried tomatoes, mushrooms and goat cheese. Finished it off with avocado and a spoonful of hummus. I swear to you that although this seems so random it worked. I was surprised myself.

Always have to end with a sweet treat! Chai latte and molasses cookie sandwich with cream cheese icing from Whole Foods. A little afternoon pick me up while I was getting some work done in the cafe.
