My day started with a 5:30 a.m. alarm to teach a 6 a.m. hot yoga class. While there’s always the initial groan and lack of desire to get out of bed, my students always make it worth it. When I walked into the room this morning the room was buzzing with energy. It was a great class! 🙂

I headed over to Metro to train a client after teaching and then came home to go crazy on my inbox. I have SO MUCH to catch up on from taking last week off. I did what had to be done while I was with my grandmother but let most things slide.

While I’ve been working my crew has assumed their regular positions. They are ridiculous! The video version I posted of this on Snapchat is even funnier. (You can find me on Snapchat @jendecurtins…I love watching people’s Snapchat stories!)

Sharing recent eats today. This is a mix of the last few days with my family + what I’ve been making since I’ve been home.

I went out with a bang on Sunday at my grandmother’s! We made a pan of Cinnabon cinnamon rolls and I added a scrambled egg and some raspberries to my plate to try and give it a little staying power.

I’m on a plain greek yogurt, honey, banana, granola and peanut butter breakfast kick.

More banana, honey and peanut butter but on sourdough bread.

Open-faced avocado, egg, cheddar and tomato sandwich.

Salad with mixed greens, chick peas, pecans, avocado, sliced apples and chicken salad with lemon tahini dressing.

Wrap with hummus, tofu, avocado, cheddar, mushrooms and spinach. Check out my “Perfect Pressed Wrap Tutorial.”

Spinach, avocado, tomatoes, feta, shredded leftover baked chicken thighs and feta with cashew lime dressing and hot sauce.

My dad made these AMAZING meatballs with a homemade red sauce and polenta while I was in Georgia. They were to die for! He’s going to send me the recipe and I’ll share with y’all! I contributed some sauteed garlicky tuscan kale on the side.

The next night I made a meatball sub out of the leftovers. I hollowed out a sub roll to make a “boat” and then filled it up with meatballs and sauce and topped it with cheese. I haven’t had a meatball sub in a good 5+ years so this was pretty magical.

Sauteed wild Alaskan cod with roasted asparagus and a super grains mix from Whole Foods that I cooked with mushrooms, garlic, onions, feta and tomatoes. Cod is my new favorite. It’s affordable, easy to handle and I love the meaty but still light and flaky texture. We loved this dinner.

Spiced chicken thighs with roasted butternut squash and green beans. If you haven’t tried my spiced chicken recipe yet, you are missing out. It’s so simple and so full of warm flavors. You make a rub out of cumin, coriander, cinnamon, chili powder, salt, pepper and olive oil and coat the chicken with it. You brown the chicken in the skillet and it finishes in the oven. I have made this with many different cuts of chicken from boneless breasts to bone-in, skin-on quarters. It’s good any way you make it but I’m especially partial to the bone-in, skin-on dark meat.

Baked tofu (method/tutorial in this post) with sauteed spinach and the same super grains mix that went with the fish. I made it again because we liked it so much the first night.

Takeout salad from the cafe at the studio when my dinner plans out with a friend fell through. Since I thought I was going out this night, I hadn’t planned anything when I did my grocery trip. Mixed greens, roasted beets, toasted walnuts, feta, chicken breast, red quinoa and a tahini balsamic vinaigrette.

And we must end with something sweet. I had this apple pie with ice cream on my last night in Georgia…along with that meatball sub. Go big or go home! My dad and I went out in search of sub rolls and “a treat” per my mom’s request. We ended up at Wal-Mart and found this apple pie in the deli section. We reheated it and it was really good! The crust was light and perfectly crispy/flaky and the apple filling was very cinnamon-y. Hard to go wrong with apple pie. 😉
