Weekend: Much to be Grateful For

Hi and happy Thanksgiving week! I hope that everyone is feeling extra full of love and gratitude. We all truly have so much to be thankful for.

I am grateful for a lovely weekend in Charlotte. I spent a lot of time hanging out with my fiance and the pups and it was just what I needed to feel both connected and grounded in gratitude. Here are the highlights.

Friday lunch date/business meeting at Earl’s Grocery. He got the Bahn Mi which was incredible and I stole many bites of.

I had the daily quiche which was a very interesting combo of duck confit, goat cheese, beets and chives. I’m not sure that I’d agree that beets work in a quiche but the buttery pastry crust more than made up for it.

I had a skim milk latte and we shared the peanut butter pie. We brought the cupcake home to enjoy later. It was a gingerbread cupcake and to die for!

We spent a lot of time at the park this weekend. The weather was gorgeous and the pups love to run.

Well, Zoey loves to run. Sullie prefers trotting around and sniffing things and rolling around in the grass. We use the chuck it for Zoey and she sprints the entire distance of the field. We have to hold Zoey when we throw Sullie the ball and we throw it about 20 feet and give her BIG cheers when she goes after it. Sullie has never been a ball chaser. She is totally different than her sister in that regard.

Saturday night in on the couch with a cheese plate, a bottle of wine and Trainwreck. If you haven’t watched this movie, you must. Sure to make you laugh out loud. Amy Schumer is hysterical.

On Saturday I practiced yoga, taught yoga and then headed back to the park after lunch to soak up more sunshine and puppy playtime.

Later that afternoon we headed out with a mission to stock up on holiday supplies to decorate the studio. First I needed to caffeinate. 2% latte from Not Just Coffee (<-  I have been all about regular milk in my coffee drinks lately instead of alternatives).

We found this inflatable Handstand Snowman at Lowes and of course it had to go into our cart.

We planned on seeing the new Hunger Games movie on Saturday night but decided to stay in again instead. This time I cooked a Blue Apron dinner and we watched the new Mission Impossible movie. I couldn’t take the movie seriously after just having listened to Leah Remini’s new book, Troublemaker. It’s a memoir that includes a huge focus on her 30+ years as a Scientologist. The book was both funny and fascinating and included a lot of Tom Cruise details.

Sunday mornings start with green juice and French press.

And then I started baking. I made chai spice sugar cookies and oatmeal cranberry white chocolate chip cookies. They both turned out so wonderfully. Chai Spice Sugar Cookie recipe coming soon but you can find the Oatmeal Cranberry White Chocolate Chip recipe here. Note: I made them regular sized instead of the jumbo cookies recipe calls for and reduced baking time.

Brunch was an open faced avocado and egg sandwich with lots of melted sharp cheddar cheese on sourdough.

Later Sunday I taught a Total Strength class at the Y, a hot yoga class at Y2 and then ended my evening at the studio where we had a “deck the halls” extravaganza. We ordered pizza and opened some wine and a group of us went to town transforming the studio into a winter wonderland. Our tree turned out beautifully and my cookies were a hit! 🙂
