Happy Black Friday!
We are heading back from a wonderful 48 hours in Edisto Beach where we spent Thanksgiving with my fiance’s family.
Edisto Beach is a small, charming coastal town just south of Charleston and Kiawah. I have visited many South Carolina beaches but this was my first time in Edisto.
We drove down with his brother and sister-in-law and arrived on Wednesday evening. We were welcomed with a spread of snacks and chili. I LOVED this chili. It was made with Italian sausage instead of ground beef and dried beans instead of canned and also had a little cinnamon in it. So good!
After nine hours of sleep I was up and ready to get moving on Thanksgiving morning. We headed out for a little turkey trot of our own.
I ended up covering 8 miles (my fiance and I decided to part ways after the first 2 minutes of the run…haha) and it was amazing. The weather was so perfect.
After getting showered and dressed (and making a bloody mary) I got to work on preparing a kale and butternut squash salad with pomegranates and pumpkin seeds.
I also baked a bourbon pumpkin cheesecake with gingersnap crust that made the trip with us.

We had a really nice spread of food. My plate was full of sweet potato casserole, kale salad, stuffing, ham, turkey, cranberry sauce and gravy. I also had a freshly baked roll. While I love Thanksgiving turkey (<– dark meat please!), the ham was where it was at. It was a whole bone-in ham and so juicy and delicious.
Dessert a little while later was apple crisp and pumpkin cheesecake. We had a houseful of 10 adults and 4 kids so it was quite a feast. My plates don’t even show all the other stuff we had like collards, chocolate cake, pumpkin brownies, lima beans, etc.
We ate around 2:30 p.m. so I made myself a little “second dinner” around 9:30 p.m. after watching the Panthers game and playing Head’s Up with everyone. I made a slider from one of the rolls and added ham, brie and cranberry sauce. This is one of my favorite things to do with Thanksgiving leftovers. Lots of kale salad (and unpictured cheesecake) on the side.
We woke up to another gorgeous day this morning.
After eating more ham and bread, this time in biscuit form, we headed out to soak up the sunshine.
My fiance and I took a long walk on the beach.
And then a ride in the golf cart to explore Edisto.
We stopped in a cute little coffee shop where I grabbed a latte and then headed back to the house where we took a big family picture, said our goodbyes to everyone and got on the road back to Charlotte.
Between traveling to be with my mom for her birthday, spending a week with my grandmother and having Thanksgiving with my fiance’s family, I am feeling very thankful for time spent with family. As we enter the new year, I am putting a huge focus on more family time. It’s so important.
