Hey there!

I got back to Charlotte at 5:45 last night…just in time to teach my 6 p.m. hot class. It was so good to see my yogis but I always appreciate a few days off from teaching every couple of months. When you teach 10+ classes a week sometimes it can seem like you’re doing and saying the same thing over and over again. After a few days break I was ready to jump back into it!

I was able to stay at the beach until about 2 p.m. yesterday. Sunset is such an easy drive from Charlotte…just a little over 3 hours. Once the weather cools down a bit and off-season rates start, I want to take a long weekend trip with Tanner and the girls. I said it last year but I am determined to make it happen this year!

It was brutally hot at the beach this year. I think the low in the evenings was only around 80 degrees so mornings were humid and steamy. I ran yesterday morning and it was the worst day to run…trash pick up day! The heat and humidity combined with trash cans lining the street made for one smelly run. I tried to run in the middle of the road whenever I could to avoid the smell. And half of my run was on the beach so I can’t complain about that. Sunset has the best beaches for running, wide and flat. I can never run on the beach when I’m home visiting my family because the sand is too soft and sloped.

I got home to find this sweet face. Meet Bear Bundon. He’s staying with us for two weeks. He belongs to one of our teachers and we eagerly volunteered to dog sit when she told us her family would be out of the country this summer. He’s three years old and extremely chill.

He’s fitting right in with our two girls. This was the scene last night. All three of them were chewing on bones. (<– these bones are the best!) So happy to welcome Bear into our home for a couple of weeks although I may have to bump my daily vacuuming up to two-a-days! 🙂

A few beach eats to share and then I’ve got to run off to teach yoga.

Nectarine, blueberries, scrambled eggs and Zucchini Carrot Banana Bread with almond butter. Two things…1) I ate scrambled eggs for breakfast every morning while I was gone. 2) I got quite a few requests on Instagram to share the bread recipe so I will do that next week after I test it one more time. I’m kinda crazy about making sure that recipes will turn out perfectly for you guys and the texture could have been improved a little here.

Lunches were a rotation between salads and sandwiches…both with chips on the side! Chips are one of those foods that you just have to eat at the beach.

I topped my salads with turkey and used whatever veggies we had on hand.

I made a sandwich for the drive home yesterday. It’s been forever since I had a sandwich like this with soft wheat bread, deli meat, tomato and lettuce and it totally hit the spot.

I also made the mistake of traveling with an entire bag of ALDI sweet potato chips. (Side note: I still use an old school GPS on road trips sometimes because the iPhone map app drains my battery faster than anything else!)

Our dinners were awesome.

I didn’t get in until about 8 p.m. on Saturday night and Dorie had dinner ready to go. She grilled teriyaki chicken breasts and we had roasted veggies and rice pilaf on the side. The chicken was so tender and flavorful. I went back for a second piece.

Fish taco and Mexican quinoa night. I think this was the crowd favorite dinner. You can never go wrong with tacos.

You’ve already seen this one but it was so good I have to post it again! Grilled plantains, peanut butter sauce grilled shrimp skewers, coconut rice with fresh mango and steamed asparagus with lime crema.

On my last night there we grilled burgers and roasted potatoes and peppers. We buttered and grilled the buns and I swear it makes the biggest difference in the deliciousness of burgers.

We didn’t have much in the fridge when I got home from teaching last night so I thew everything we did have onto a roasting pan and made a one-pan roasted dinner with brussels, potatoes, sweet potatoes, parsnips, carrots, onions and chicken apple sausage. We ate it while watching Parenthood. I’ve heard so much about it over the years and we were looking for something new to watch so we’re trying it out.
