Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk (any – I used almond)
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed
  • 1 teaspoon cinnamon
  • Pinch of pumpkin pie spice, if desired
  • 1/2 teaspoon vanilla extract
  • 1/2 cup blueberries


Instructions

  1. Whisk together flour, sugar, baking powder, spices and salt. In a different bowl, whisk together egg, milk, oil, vanilla and mashed bananas. Mix wet and dry ingredients together until combined. Batter will still be kind of lumpy. Gently stir in blueberries.
  2. Heat an oiled griddle or sauté pan over medium heat. Using a 1/3 cup measuring cup, pour batter onto cooking surface and cook 2-3 minutes per side, or until golden brown and set in the center.
