So, I gave up on my blog post last night before I made it to dinner. I was too tired! We went over to my in law’s for a cook out. Loving this beautiful weather in Charlotte.
Another outdoor meal. I am a happy girl!
We had barbecue chicken, cole slaw, deviled eggs, baked beans and red potato salad. It was all so delicious although dessert was the shining star of the night!
My mother in law made a four day refrigerator coconut cake. The recipe was published in the Charlotte Observer last week so she decided to give it a try.
I had a slice of cake and hot tea. A perfect end to a beautiful evening outside. I love dessert! 😛
I was up at 5 a.m. today to teach BodyPump. I must be honest. I am considering giving up my Monday morning BodyPump class. I’ve been teaching the 6 a.m. for almost a year and a half and some weeks it is really a challenge to make it happen. I’m so torn because I love teaching BodyPump but I feel like I need a break from that time slot. I would definitely keep my Thursday evening class though! Decisions, decisions. Thoughts?
Breakfast was overnight oats in an almost empty Chobani container at my desk. I was a little heavy handed with the almond milk so they were pretty soupy this morning. I much prefer them thick!
I had to use the leftover grilled tuna in my lunch today.
I made a salad with mixed greens, carrots, feta, almonds, dried cranberries and tuna with a lemon dijon honey vinaigrette.
I’m working to complete the 10 hours of assisting required for my 200-hour yoga teacher certification so I assisted a hot class this evening. Assisting is the best! You don’t have to worry about teaching, you can just walk around and help people. Love it!
Dinner tonight was quick and easy. I made a big pot of spaghetti sauce Sunday afternoon. I froze a batch and put the rest in the fridge for tonight’s dinner. So good!
Full disclosure: I definitely had some left over coconut cake for dessert! 😉
