I have been buying veggie burgers since I was in college. MorningStar Farms was one of the first brands that I ever tried. 10 years ago they were one of the only brands of veggie burgers! When I first started eating veggie burgers I ate them like a straight up burger. Over the years I have become more experimental with getting out of the bun and I’ve started using veggie burgers in a variety of new ways. It’s easy when there are more flavors and styles available. MorningStar Farms now offers over 30 products ranging from breakfast sandwiches to burgers to meatballs and everything meatless in between.
Recently I stocked my freezer with their Spicy Black Bean Burger, Original Sausage Patties, Mediterranean Chickpea Burgers and Buffalo Chik Patties. I decided to make a day out of MorningStar Farms products and include them in my breakfast, lunch and dinner.
Breakfast was fresh fruit, a perfect egg and a MorningStar Farms Original Sausage Patty. This was a break from my usual smoothie but it sure did power me through a busy morning of meetings, writing and teaching. I didn’t think about a snack once. I have actually been buying these sausage patties for years and keep them in the freezer for a quick side when I’m eating brunch at home. They also work well on egg sandwiches and in egg scrambles. One sausage patty has just 80 calories and 9 grams of protein. Pretty great!
Lunch was my favorite meal of the day! I made a wrap with the Spicy Black Bean Burger. These burgers are made with black beans, corn, brown rice and chili peppers from some kick. They come in at 110 calories, 4 grams of fat and 10 grams of protein. That’s 72% less fat than your average beef burger.
I started with a FlatOut and then added light mayo and chopped cilantro, avocado, a sautéed Spicy Black Bean Burger and Colby Jack cheese. I rolled it all up and pressed it in a skillet and served it with salsa for dipping. I will be recreating this wrap over and over. It was super delicious.
Dinner took a Mediterranean spin and I got the idea to make a kale wrap with gyro-inspired ingredients/favors. I sauteed the Mediterranean Chickpea Burger which is made with chickpeas, spinach, roma tomatoes and Greek herbs and spices. It is also low in calories and fat coming in at 110 calories, 4.5 grams of fat and 10 grams of protein. While it was cooking I washed and dried a Lacinto kale leaf and spread it with a thin layer of lemon hummus. I whipped up a sauce with plain Greek yogurt, mint, basil, lemon juice and salt. I topped the hummus layer with the chickpea burger and then finished it all off with the yogurt sauce, feta and sliced tomatoes. This was such a winning combination and another thing I’ll be repeating over and over again.
I never missed the meat in my day of meals featuring MorningStar Farms products. While I am not a vegetarian, it’s nice to take a day off and go meatless from time to time. The variety of products from MorningStar Farms makes this easy to do.
