It’s a gray, cold and icy day here in Charlotte. It’s 27 degrees and we are supposed to get a lot of freezing rain and ice this afternoon. Of course that has caused the closure of many schools and businesses but our plan here at the gym is to stay open and run classes as normal. Crossing my fingers that the road conditions stay okay…especially since I’m planning on attending a master class with Bryan Kest tonight (he’s the founder of power yoga!!!).
Sullie and I have been trying to stay warm. I broke out my winter hat for the first time this season. And then got laughed at when I walked into the gym! Whatever, I’ll take warmth over cuteness any day!
Lunch today leftover pine nut cous cous from last night’s dinner (see below) with sauteed spinach, sundried tomatoes, smoked salmon and feta mixed in. Topped with avocado, hummus and plain Greek yogurt. Why is smoked salmon so good?
Backtracking to last night’s dinner, I feel like all I’ve been eating lately is chicken, chicken and more chicken so I stopped by the grocery on my way home last night to pick up some fish. Lucky for me, they were having a great sale on mahi. This dinner was healthy, delicious and ready in under 30 minutes.
I have this week’s fitness Friday workout and video ready for you but I’m just waiting for the video to finish uploading to YouTube. Unfortunately, it takes hours for them to upload when I shoot in HD so I’m trying to be patient but I wish there was an easier solution!

JT finally comes out with a new album after like 5 years and I don’t love the first single, Suit & Tie. I’m a little devastated. Hopefully the rest of the album will make up for it.
