Recent Eats + My New Favorite Salad Combo

Welcome to recent eats: the salad and smoothie edition. I think that our immediate launch into summer here in Charlotte put me in the mood for cold and light food. I’m NOT COMPLAINING though. I will take 90 degree days over 40 degree days ANYTIME. I am a summer girl through and through. Bring on the heat!

Green smoothie April wrapped up 10 days ago but I’ve drank a smoothie for breakfast 9 out of the last 10 mornings. It’s just the best way to start the day. I make a lot of salads at home for lunch every day. I am always switching up my combos and I have a new one to share with you that I’ve had three times this week. Here are the recent eats!

Breakfast

Another purple pb & j smoothie but this one did include spinach.

Green smoothie with banana, spinach, mango, peaches, vanilla greek yogurt, vanilla coconut milk and protein powder.

Lunch

My new favorite salad combo of the week. I have had this for lunch the last three days in a row. Her are the details: Mixed greens + arugula Cucumber Red Pepper Hardboiled Egg Goat Cheese Boar’s Head Ever Roast Deli Chicken Nuts (pecans, almonds, walnuts, etc) Dried Cranberries Avocado Honey Dijon Balsamic Vinaigrette Try it! You will love. A perfect blend of crunch, healthy fats and protein.

Same salad, take two.

5.10salad5.jpg

Harris Teeter salad bar for lunch on the day I cooked for my client. Note the ranch dressing…YES.

Dinner

Oh look…more salad! Dinner out with friends who were in town visiting. Mixed greens, cremini mushrooms, goat cheese, bacon and grilled chicken.

5.10salmon.jpg

Baked salmon topped with a basil and meyer lemon compound butter served with mashed cauliflower and green beans. Fave meal of the week! (Well, after Dad’s pizza on Monday night.)

5.10chicken.jpg

Mashed sweet potato, chicken and roasted broccoli and mushrooms.

What foods do you crave when the temperatures start to go up?ย

Yummm! I crave fruit…and ice cream. Haha – I guess that means more banana soft serve when summer FINALLY arrives around here.

This may be a silly question, but how do you bake your salmon exactly? Also, what type of spices do you add to it?

I love making green smoothies in the morning, but don’t love when they have a milky taste to them. I’ve been using juice but it totally overpowers the flavor. Do you have any suggestions?

have you tried plain unsweetened almond milk? if that’s too much for you try coconut water. or i know some people who just use a little water. i agree that juice can be overpowering.

thank you! I’ll try it! I really wanted to make the pb&j, but didn’t think it would mix well with OJ ๐Ÿ™‚
